How to Make Spicy Cumin Lamb: A Recipe from XinJiang

  • Hi Friends! Cumin Lamb (孜然羊肉) is my favorite dish to make whenever I can get a hold of some good quality lamb. This dish is best to be made with lamb leg and I found that Trader Joe's has these amazing lamb leg. Of course if you have other butchers for good lamb, go for it! Cumin Lamb is a traditional Sichuan dish and can be commonly found in halal restaurants in Chengdu! The spices we put on the lamb nicely neutralize the strong flavor of lamb meat, making it very very tasty!

    Ingredients:
    1 lb lamb leg (highly recommend Trader Joe's lamb leg, go check it out if you shop there! )
    Salt for marinate (1/2 tsp)
    White pepper powder for marinate (1/4 tsp)
    Cumin Powder for marinate (1/4 tsp)
    Soy sauce for marinate (1 tsp)
    Corn starch for marinate (1 tbsp)
    1 piece ginger (sliced)
    2 scallion white (chopped)
    Shaoxing wine 2 tbsp
    Purple Onion a few slices (about 1/3 of a large onion)
    Cilantro 1 handful
    Dry Seasoning:
    1 tbsp mild chili powder
    1 tsp cumin powder
    2-3 tsp sesame seeds
    1/2 tsp Sichuan peppercorn powder
    1 small handful of cumin seeds
    2-3 tbsp Cooking oil
    1 tsp soy sauce (or to taste)

    Cumin Lamb! I would recommend everyone to try this recipe. To me, it's a must have dish every once in a while when I crave for XinJiang cuisine. Also, this goes perfectly well with rice and raisin by simply mixing them in a bowl. Thank you for sharing the recipe!

    2:28 I really like how you marinade your ginger and scallions in the wine. You did it in the fish soup recipe as well and then used that marinade for the fish. Very clever! I haven’t seen that before!

      It’s widely used in Sichuan cooking because the chefs want to remove the unpleasant meat taste as much as possible! It’s called scallion and ginger water (cong jiang Shui)! 😊

    Lamb fat is like gold to me, will the recipe still work out ok if I leave a bit more fat on? I even got the same TJs leg of lamb so its pretty much the same product.

      Yes a little fat is good! I would cut off the skin though! ☺️

    Can I use beef in stead? I don't like lamb as it has a gamey aftertaste I don't like.
