Three Different Ways of Plating Steak | Steak, Cabbage Puree, Peppercorn Sauce

  • Today, I made a steak dish, with guanciale cabbage puree and peppercorn sauce and I will be plating steak in three different ways.
    Many of you seemed to like the duck plating video I made a while back, and I wanted to make a similar video.
    I had fun making this video and it was also a good opportunity for me to practice my plating technique! (It's been rusty since I haven't been in a restaurant kitchen for several months now. I really miss working in one these days!)

      I'm baffled, too. I see so many inane Tik Tok videos where everyone riffs on pretty much the same thing. The recipes here are highly original and pay homage, where due, to great chefs like Corey Lee. I hope you gain more traction, Daniel!

    OMG that peppercorn sauce!! I've never seen soft green peppercorn like that before :O Thought it was capers for a second! Is it spicy?

      Hahaha thank yo! They are not spicy but very peppery :) it's delicious and they are in a can so it lasts a long time! Worth it to have one in the pantry hehe

    Can you make the cabbage puree ahead of time and use it the next day??? And how do you heat it?

      You could totally do that! You could heat it in a pot or microwave in 30 second intervals, and stirring then until hot!

    Are you able to post the recipe for the cabbage purée?

      yes, it's 5g butter, 20g guanciale, 100g cabbage, 30g onion, 1g salt, 80g chicken stock and 10g cream. Reduce the liquids down depending on the consistency you are looking for! Thank you for watching :)

      You could keep it warm in a Bain Marie theoretically but it's more ideal to make them and heat them up before serving imo! Thanks for watching 🙏🙏

    How many minutes was the tomato baked for?

      I would start at 90 minutes and check every 15 minutes after that. Goal is to try out the tomatoes a little, without giving it a char.
