    A beautiful recipe for mousse cake "Tropics"

    Tropical compote:

    Mango puree 50g
    Passion fruit puree 50 gr
    Pineapple 80 g
    Sugar 50 gr
    Pectin Nappage (nH) 4 g

    Combine the puree with the pineapple cubes. Bring to the boil.
    Stirring constantly, add the sugar mixed with pectin.
    Bring to the boil and divide into two molds (16 cm diameter). Freeze.

    Coconut crumble:

    Butter 100 gr
    Sugar 100 gr
    Coconut flour 100 gr
    Wheat flour 90 gr

    Mix all ingredients, pour the crumble onto a baking sheet and bake, stirring constantly in the oven at 170C until golden.

    Cake base:

    Coconut crumble 200g
    White chocolate 100 g
    Lime zest

    Melt the chocolate. Combine with the crumble, add the lime zest.
    Divide into two molds (16 cm diameter) and freeze.

    Tropical cremeux:

    Passion fruit puree 50 gr
    Mango puree 50 g
    Mango pieces 90 g
    White chocolate 29% 70 g
    Gelatin (220 ml) 3 g + 18 g water
    Whipped cream 33% 90 g

    Soak gelatin in cold water. Heat the purée with mango.
    Add the gelatine and mix well. Add the chocolate, mix and cool to room temperature. Add whipped cream. Divide into two molds on top of frozen base. Freeze.

    Lime mousse:

    Cream 33% 220 gr
    White chocolate 220 gr
    Gelatin (220 bl) 8 gr + 48 gr water
    33% whipped cream 200 gr
    Lime zest

    Soak gelatine in cold water.
    Combine the lime zest with the cream and heat. Add the gelatine and mix well.
    Add the chocolate and beat with a blender.
    Cool to room temperature and add the whipped cream.

    Assemble two cakes (18 cm diameter) and frost.

    Coating:

    For the chocolate velour, melt 80 gr cocoa butter and 80 gr white chocolate. Add fat-soluble coloring and beat with a blender. Apply with a paint sprayer.

    Defrost the cake 5-6 hours in the refrigerator and BON APPETI!
