INGREDIENTS
2 cabbage
2 eggplant
4 coyote
1/2 of a papaya
1 bag of carrots ( used 4 carrots from the bag)
2 bags of fresh spinach ( 10oz each)
3 Live crabs
2lbs of Pig feet
2.75lbs beef neck bones
1 pound of shrimp
Epis (Best Haitian epis • THE BEST HAITIAN EPIS ... )
salt
Vinegar
6 limes
Sour orange juice
Chicken flavored bouillon Maggie
Seasoning salt
Adobo
Sazon
Vegetable oil
Saran Wrap
CLEANING BEEF AND PORK
4 limes
1 cup of epis (Best Haitian epis • THE BEST HAITIAN EPIS ... )
1/2 cup of vinegar
1/2cup of lemon/lime juice
1/2 cup of sour oranges
2 tablespoons of salt
Boiling hot water (enough to cover meat)
SEASONING BEEF PORK
2 cube of Maggie
1 package of Sazon
1 teaspoon adobo
1 teaspoon of seasoning salt
2 tablespoon of oil
Fresh parsley and thyme tied together
Total prep time 1 to 2 hours

SEASONING USING IN PART 2
1 tablespoon of Lime juice
1 tablespoon of epis
1 teaspoon of seasoning salt
2 cubes of Maggie chicken flavored bouillon
1/2 cup vegetable oil
1 tablespoon of butter
2 teaspoon of adobo
1 teaspoon of garlic powder
1 teaspoon of onion powder
CLEANING CRABS 🦀
2 limes
1 tablespoon Lime juice
SEASONING CRABS 🦀
1 teaspoon of lime juice
1 tablespoon of epis ( (Best Haitian epis • THE BEST HAITIAN EPIS ... )
1 chicken flavored bouillon Maggie
CLEANING SHRIMP 🦐
1 lemon
SEASONING SHRIMP 🦐
1 tablespoon of butter
2 teaspoon of adobo
1 teaspoon of garlic powder
1 teaspoon of onion powder
Step 1
In a large pot add vegetables in this order ( bottom to top)
Meat (I’m using beef and pig feet), Cabbage ,Chayote, Eggplant and Papaya. Wrap pot with saran wrap as seen on video.
Step 2
Turn stove on the medium high heat 6/7
Let cook for 1 hour and 30 minutes
Step 3
Once veggies are done cooking remove the Chayote, eggplant, and papaya place them in a different bowl/pot and smash them( NOT TO MUCH THOUGH ) when done smashing set to the side. Grab another bowl/pot remove the cabbage from legume pot and put it in the other bowl/pot smash cabbage ( NOT TO MUCH THOUGH ) set to the side once you’re done smashing them.
Step 4
Since all veggies were removed the meat should be remaining in the pot. Add 1/2 cup of tomato paste, 1 teaspoon of seasoning salt, 1 bonnet pepper and parsley and thyme tied together to meat and mix well.
Step 4
Add smashed up eggplant, chayote, and papaya to meat pot mix well than add smashed cabbage mix well than let cook for 10 minutes. Add spinach and 1 cube of chicken flavored bouillon let cook for 15 minutes than add chopped carrots and 1/4 cup of oil let cook for 30 to 45 minutes
Step 5
Add seasoned crab bury them in the legume until it don’t even look like there’s crabs in there so they can cook. Let cook go to 40 minutes add seasoned shrimp let cook for 5 minutes.
Enjoy
Total prep time 1 to 2 hours
Total cooking time 3 to 4 hours
🌟 The most important thing about legume is you have to let it dry up so if there is still a lot of liquid in the legume you have to continue letting it cook until the liquid is gone.
🔴 you will see the liquid on the side of the pot
Legume is typically serve with white rice and beans

Half Haitian here I followed your recipe it came out pretty good but something is missing... I haven't tasted Haitian food in 20 years. I mean for me this came out bustin but something is off.. I wish I had a Haitian granny close to tell me what I did wrong...
I followed your red beans and rice recipe as well and I'm guessing I messed up by using Walmart coconut milk. I forgot to get the food stuff from the Jamaican store.
I also think I marinated my meat too long in the lime and vinegar solution. I cooked it long enough to make it tender but I feel like I taste the line a little too much.
Honestly for my first time I'd give my food a solid 7. That freaking crappy coconut milk made the rice taste like it has a wax coating... If it wasn't for that I'd give it a solid 8
