Start telling him of a collectible side quest that you can only afford a small prize when complete and watch them run in horror.

That would be amazing, if you're just playing in a game trying to steal from someone and after a couple minutes he just turnes around going "what are doing? Going on.... get... get on outta here weirdo."

Quite a few games do that actually. The NPCs turn around if they notice your presence and tell you to quit snooping or not to try any funny business, etc etc.
It’s harder to find a game with pickpocketing that DOESN’T do this than one that does.

Took me forever to notice this, but in Skyrim you actually can pickpocket NPCS while they have vision of you. You just have a reduced chance to successfully pickpocket undetected.
I was expecting him to notice his hatchet was suddenly missing.

Its kind of unsettling when an NPC seems to know what you're trying to do instead of standing there like an idiot like he normally does.

I don't remember what game it was but there was a game where if you were crouched and NPCs saw you crouched theyd look at you and say "What are you doing?" This also alerted enemies to come and investigate

If you have a high enough stealth skill in a game like Skyrim though you can rob people blind while they're staring into your soul
