great points, excellent to hear from a concert pianists, you are probably aware of Yamaha disklaviers, but just in case, they have could do everything you mentioned and they are an actual grand piano, And you can record the notes played actual will play like a player piano.

You didn't talk about the latency with piano software which is maddening.

That can be an issue, but I don't have any problems with it as long as I fiddle with the settings a bit. Try reducing the polyphony if you haven't already.
