Looks great, i`ll give it a try on my BJ3. Does the chicken get crispier if you oil it before rubbing it?
Have you ever tried to do a little trick with the SlowRoller?
I've got a kamado bono not a kj so I don't have the slow roller. I never Seam to get crispy skin in the kamado I think it's too moist in there.

I don’t have a split deflector plate, shall I just crowd the coals on the outside of the basket and live the middle empty in order to get the same effect?
Yep just be mindfull when you flip to skin down about the direct heat

In all honesty it's fine 99% of the time. I'd like a slightly bigger cast iron plancha for doing smashers so I can fit 4 on instead of 3. And the same if doing 50/50 indirect.
