      @@annbacerra Bingo. There’s this notion that all pizza in Chicago is deep dish. There are very few deep dish pizza places that have been successful because deep dish is really hard to make in a tasteful way. We definitely have more thin crust pizza places here, pan pizzas, hand tossed… We understand what PIZZA is but a good deep dish pizza is special. It’s usually more expensive and ridiculously filling. On fridays I’ll get normal thin crust or hand tossed pizza. On my birthday or some family celebration we’ll spend money on Lou Malnati’s with the butter crust. Delicious food, whatever you want to call that thing. Like a good steak, I wouldn’t eat it every day. New Yorkers and general east coast people seem to think you can only get basic thin crust there. Hell, when you’re a kid here and make pizza with your mom for fun of course it’s going to be thin crust because that’s easier to make! Deep dish pizza is a specialty pizza and, yes, even in Chicago!

      A friend of mine named Francesco is the type of guy you don't want to show this video. He'd probably sue america over this blasphemy, he's very intense and loves his italian cooking tradition.     love the show but wish there was a bit more detail on the cooking side.. don't skip the good stuff for all who want to learn :) .. like how long was Nicole's pizza in the oven for and was it the same temp? and curious about Josephine's double crust.. i'm assuming it wasn't soggy at all but i'm afraid to try that haha .. what about that sauce too.. maybe she wants to keep it secret and i'm ok with that, but i'd rather hear them say they don't wanna give details on the video haha

    Josephine and Nicole are national treasures! I love the confidence they have in their own mastery of pizza, but the wisdom and willingness to acknowledge their way of doing pizza isn't the only way. They truly are icons worthy of our praise and admiration.

    Deep dish is special occasion pizza - friends in from out of town, a birthday. The every day Chicago pizza is tavern style thin crust...super thin crust, cut in squares, most often topped with Italian sausage.

      @@necrogenesis1981 because it is filling, more of a sit down fork and knife pizza. Tavern style thin crust is pizza you can eat a half pizza yourself and is the every day type pizza. There are far more tavern style pizza joints in Chicago than deep dish. Some people call deep dish tourist pizza.

    Born and raised in Chicago on thin crust, bar cut pizza. Not a fan of deep dish or pan pizza. I was 20 years old when I first heard about the deep dish pizza.

      cracker crust is the real shit but that’s ridiculous. im born and raised in chicago too and everyone at least knows OF deep dish pizza. every single non-vegan chicagoan i know has it at least once a year for some reason or a nother.

      @@djsugarc1075 Our go to pizza is still Home Run Inn. We lived a few blocks away from their original 31st location. It's 300 miles away from me now, but available frozen in my local Kroger grocery stores.

    So explain to someone who is completely uncultured about Chicago deep dish like myself what's the difference between deep dish and normal is it that because it's deeper it has more substance to it and therefore more filling or is it like the texture is better or is it better taste? But it looks good Giordano's pizza looks good

      Both texture and filling are different so in a traditional Pizza it's obviously dough, sauce, cheese, toppings. with a deep dish it's typically dough, cheese and toppings, another thin layer of dough, and then the sauce on top with a little bit of parmesan. If cooked correctly this is going to give you a pizza that is not floppy and soup like (Sean is 100% right those are the bad kind of deep dish), but something that can still hold it's shape when eaten by hand. I prefer a fork cause it gets really hot. I hope this answered your question

      Whiplash hit it basically spot on, EXCEPT for the second crust! Pizza like that & what Josephine made are Stuffed Pizzas! Traditional Chicago Deep Dish doesnt have a second crust! Then you've got a 3rd style like Pequods in Chicago that is like a cross between Deep Dish & Detroit style

      @@Angelwolfs9 a traditional Chicago deep dish has that second layer of crust. I do sometimes see it where they name differently but Giordano's has it, Lou malnati's has it, all the chains have it including some of the less known pizza places around the city. For example paisans pizzeria has stuffed pizza and deep dish which is just sauce at the bottom a shit ton of cheese and toppings but their "stuffed" is the Chicago one with the sauce on top and that second layer of crust
