Ingredients
1 1/2 tbsp soy sauce amzn.to/2Ukuq3U
3 tbsp rice vinegar
3 tbsp sugar
1/4 tsp salt
1 tbsp sesame oil
1 clove garlic, finely chopped
1 small or 1/2 medium size shallot, finely chopped
2 lb Persian cucumber - Jak na to + styl

My dad makes it once in a while,and🥒releases💦from your body like a diuretic.Sichuan pepper also tastes👍and adds a numbing flavor.
I use a pan to push down on to "smash" the cucumber.

Over a span of four years, I lived in Taiwan and absolutely LIVED for dishes like this. Cucumber salad (smacked type, like this) was irresistible to a 20-something guy but the Xue Li Hong was absolutely a culinary revelation of a higher order!

Hello Seonkyoung, I made this dish today for lunch to eat with the dumplings I steamed, it was super delicious I loved it. I have put the rest in a tupperware for dinner. My boss taught me how to make this and he adds red peppers and it makes it spicy , really good. I keep this as a side dish at my house and I eat it with Mexican food lol

I made this along with homemade pork dumplings for my boyfriend and his father. They both love my dumplings but they were skeptical about the salad as they can be quite picky. But we all loved it! So light, refreshing and simple AF. Quick and easy. Perfect contrast and compliment to the dumplings. I will make it, again and again, this summer. Plus smashing the cucumbers was totally cathartic.

If you like a bit of heat I would recommend adding a finely chopped red chilli. Improves taste and aesthetics
