I worked at a greasy spoon one summer and I absolutely loved the discovery that the few cooks that worked there took the job _very seriously_ without being serious people. It's so cool seeing someone being a fun goofball but going into this stoic serious mode about getting the meal right and making sure everything was safe and sanitary.

Pick up slack when it’s needed and end of the day doesn’t try to demean her teammates especially Tina. Could easily choose to be petty but instead calls her down and walks her through it because end of the day it’s a team so if Tina fails then they all failed as a team for not picking up a teammate

Going off the most expensive and highest quality butter I can get at the supermarket now ($8.49 per pound) that would cost them 14,857.50 dollars a month in operation cost. So ya 11k is reasonable for a higher end restaurant using quality butter shipped in from out of state at wholesale.

A lot of people seem to forget that the initial investment required to entertain Michelin is a drop compared to the money youll make afterwards. Also Michelin is the Gourmet of the food industry. They even inspired the star guide for hotels from Mobil. Giving stars as a rating for quality of work was their invention.
And a big reason high end restaurants fail. If you don’t have a Michelin star, it kinda shows the level of experience and skill in the kitchen. I worked in a 2 star restaurant and it was helllllll and I just plated dishes. But the stress pays off when you get a good review and can up your costs due to demand
It's definitely pointed out in the show, they're almost always busy after the bear opens, but they're barely breaking even because of the ludicrous costs carm keeps racking up. They are charging pretty reasonably from what's implied for a fancy high end restaurant aiming for a star, but they keep changing menu items or ordering expensive one off ingredients, so can never make a profit - a bit of an issue when they have debts to pay off
To those that haven't seen the show, Carmy worked at a 3 Michelin star restaurant and is known for retaining those 3 stars. He also got verbally and mentally abused by his head chef there and still carries that trauma with him. Now, he's trying to get a star at his own place. So in more ways than one, he is holding back his new spot with old ghosts.

Bruh, I'm from Orwell Vermont. There are only 2 farms that make butter. One is an old couple that makes butter for themselves and sell the extra in small batches to locals. The other is the Monument farms co-op (a collaboration of local farms). Monument Farms butter is about $5 for 4 sticks in stores

They dont have time to baby you, were crrating perfection. Pretty much all food prices are dystopian at this point.
If they were using such expensive ingredients and they were full every night they weren’t charging enough.
It's definitely pointed out in the show, they're almost always busy after the bear opens, but they're barely breaking even because of the ludicrous costs carm keeps racking up. They are charging pretty reasonably from what's implied for a fancy high end restaurant aiming for a star, but they keep changing menu items or ordering expensive one off ingredients, so can never make a profit - a bit of an issue when they have debts to pay off
Just like on Hells Kitchen. They scurry around looking so scared when the chef walks past or addresses them😂

Bruh, I'm from Orwell Vermont. There are only 2 farms that make butter. One is an old couple that makes butter for themselves and sell the extra in small batches to locals. The other is the Monument farms co-op (a collaboration of local farms).
Monument Farms butter is about $5 for 4 sticks in stores

I spent half my career as a sous, i mever wanted to peogress past that personally. But, having chefs that were extremely hard on the staff was equally rewarding. They dont have time to baby you, were crrating perfection. No matter how hard the chefs were they always bought a round of drinks aftwr the kitchen was closed and they always stayed dor the drinks amd conversation

The best description I found was “in a taste test comparing this to normal butter, the store bought stuff felt more like eating wax”.
