Venti being God of Death makes sense. In the world of Genshin, the gods doesn't control what they represent. Rather they got those titles from past experiences related to that. For example: Barbatos is the God of Freedom. He doesn't control freedom, only that he helped or saved his people from a tyrant and giving them freedom.
So why can Venti be considered as the God of Death? Because of two reasons:
1) He has experience with death
2) He has involvement with death
*He has experience with death*
This doesn't mean he almost died, but has lost someone to death; his friend.
*He has involvement with death*
He controls the wind. The wind guides souls back to their homeland.
