1 Cinnamon Stick

Typically is a bit more fermented (I'd try a week) Instead of light brown sugar we use unrefined brown sugar, other than that, your recipe is spot on.

I always add the pineapple first and melt sugar with water and pour over the top. And spoon off the foam on top

I ferment it for 4-6 days then bottle it. Then i leave it out for 4-5 days (burping it daily) and it gets carbonated and sugar levels decrease greatly. Then refrigerate and drink a 12oz glass daily mmmmmm

I'm assuming that anything going inside the jar needs to be scrubbed first, including apples, pears, and hands. Brown sugar seems much easier to dissolve in a separate container, especially for that second batch. Will see how it works with some peeled ginger root. Thanks!
Yes sanitizing is important and always have clean equipment in the kitchen. Ginger would be a great addition for sure. 👍👍

Don't think so. You use pineapple because of the yeast in the skins.
I brewed a batch of cotton candy grape wine last week and I check the hydrometer today and it’s at 0.990 does that mean it’s at stuck fermentation
Nope that means it's ready to rack and done fermenting. Anything below 1.00 sg
Do I have to add wine tannin at the beginning phase of making wine or could I add it during second fermentation
I always do upfront while fermenting.
How to preserve it for 1 month as tepache ?
It will last in fridge a few weeks... will slowly turn to vinegar. Meant to drink quickly not age.
There was no mention of sanitation... Is that not needed here??
Always make sure your equipment is clean... this is a short ferment so full sanitization not really necessary.
