Yeah, mofongo! It is a signature Puerto Rican dish made from fried plaintains mashed in a big mortar and pestle with lots of garlic, salt, oil and chicharron. Goes well with braised meat and seafood stews. There are also a lot of Chinese Cuban restaurants in Manhattan. You may want to check them out when you get a chance.

Yep green plantain fried once n then it’s smashed with garlic n butter but of oil n sometime they add some chimichurri sauce

This might be the only way for a PR restaurant to survive in Cali (except the bay, lots of Ricans there)...has to be paired with either Chinese or Mexican food. I been saying it for years, now I see it works.
I know Mofongo!!! Many say it’s very delicious 🤤 but I’m Muslim and can’t eat it.

Check any Mofongo recipe and just replace the "chicharron" (crackling pork skin) with some vegan "chicharrón". I have seen some vegan options on the internet. Might not be exact, but I bet it's gonna be close enough. Everything else is plant based so it shouldn't be an issue.
