- Bon Appétit test kitchen manager, Brad Leone, is back with episode 2 of "It’s Alive," and this time he’s taking you to school, making tangy, creamy, salty cultured butter. Will it be boring? Nope. Is the process scientifically accurate? Maybe. Will there be jokes and made-up words? Most likely. Will you learn about butter? Of course. Get those churning hands ready, buy some buttermilk, cream, and grab some bread. It’s Butter. It’s Alive.
Join Bon Appétit test kitchen manager, Brad Leone, on a wild, roundabout and marginally scientific adventure exploring fermented foods and more. From cultured butter and kombucha, to kimchi and miso, to beer and tepache, learn how to make fermented and live foods yourself.

Brad Makes Cultured Butter | It's Alive | Bon Appetit - Jak na to + styl
“Add the ice, and then fill it with a little wourder. And make a real fancy thing called ice wourder.”
Thanks for the pro tip Brad.
A three-for-one!
This is why he's the test kitchen manager
wourder
"They don't teach you this in culinary school"
I liked how he used a wooden spoon to take the cream out of the jar and then a flexible spatula to try to squeeze the liquid out of the butter lol
He’s dumb
I thought the same exact thing... I was like, do they not have silicone spatulas?!
HCJalMex I mean it worked
I was thinking the same! Silicone spatulas are the best invention ever!
@@tylerwolf7021 but wasteful
the most wonderful thing is when he realizes that cream is... wait for it... cream-colored
Those sound effects always make me think he actually broke something and then I remember it's not real and laugh at myself
dude same
It's raining and I thought about opening the door to the screaming cat outside
I want to like, but its so perfect. Its 699. 69. Hell yeah.
Same
Iffkr, so real
I had no idea Gabby started off as a kitchen assistant and now she’s got her own segments on BA videos and that makes me so happy :’)
Gaby is the best!
It's the opposite. She used to be a kitchen manager in the old vids. And now she is a kitchen assistant in the recent vids. sounds like a demotion =\
AyoJayArr this is an old video
haha now she has the job Brad had in these
Brad had the same job, then worked up to Kitchen manager, then became a full time food editor for the videos.
Brad: all pasteurized is pasteurized at the end of the day
Claire: :O
Brad: well put Claire
LMFAO
No wonder she's half-sour, she keeps getting cut out 😂😂
I've seen that cut in other videos and I always laugh 🤭 poor Claire 😂
im laughing so much because i clicked on the kombucha video, dropped my phone, caught it, must have clicked on this video in the process, and THIS WHOLE TIME I THOUGHT THIS WAS STILL THE KOMBUCHA VIDEO
Hope Nilsen hahahaha
And then everyone in your house clapped?
That's how I mess up cooking too.
Taking a sec to appreciate that you caught your phone 👍

Big up to the editors - they got a sense of humor alright
THE editor. The man, the myth, the legend: Vinny.
Spo8 Vinny is the cameraman not the editor
kaemjalo Does Vinny not also edit? All the text from the editor is from Vinny's point of view.
Gotta find that cat tho
Spo8 matt hunziker is the editor (probably spelled the name wrong)
butter so cultured it drinks craft beer and listens to frank ocean
This comment made my day hahaha!
Dhanyiiaaa the most interesting butter in the world
Dhanyiiaaa you win
What planet are you on? Cultured is craft beer and frank ocean? LMAO
@TheMoreSubsYouHaveTheGayerYouAre what do you have against Frank Ocean?
brad is definitely one of the more entertaining people in the CZcams food scene
nice nice
I'm literally binge watching Brad's episodes - he's bloody brilliant!
Good Looking and Cooking I'm on the point of my life where watching Brad and Vinny, Vin, Vincent, Vincenzo is all I need to survive.
Woah, you are good looking and you are IN FACT cooking!
Welcome to every day of my life
Harry Potter much
Yeah I binged and my gf came home from work and started watching so I started over again. I regret nothing.
the editor has a great sense of humor that matches Brad's personality very well.
The smashing glass gets me every time.
Brad talking to Vinny instead of the camera/ audience. And the crazy editing. Man, This show was SOMETHING in its infancy. I love this series so much. and everyone involved
I've subscribed to BA because of Brad. And I love Brad/Claire collabs.
They are the perfect working couple!
I like how well-spoken Vinny is. Really has a way with words, that Vin.
"Ya knaw i dawn't speak much freanch i dawn' speak dat well English baddah BOI it's fun to say buttar in freanch
BO

LEONE, B.
A modern poet.
It was fantastic when spoken, but it becomes godly when written out.
Its pronounce ''Beurre'' in french ... Like when you say ''Burr'' in english :)
The editing is amazing
Agreed
I screamed at him Googling how to make butter 😂😂
Someone give this guy a cooking show!
This is a cooking show.
I'd pick 350,000 subs on youtube over a bullshit tv show with several bosses on Food Network any day.
Someone give this guy a cream guy!
With vinn
He's got one :D
Gabby did well from kitchen assistant to manager
I've been binge watching these and just now realized that the editor edits the sound when Brad shakes things 😂 I'm over here thinking he could be performing jingle bells with those jars!
Whoever edited this needs a pay rise.
yeah totally and then the hundreds of people commenting on how much they love it will stop watching. good idea.
god i was watching this thinking "i bet its some talented starving intern that edited this"
Some Guy god your life must be so depressing
Some Guy wtf man
Some Guy are you ok? Who hurt you?? Jesus
Raw milk = Mooshine
I don't get why you would want to consume raw milk. There are literally no benefits in comparison to pasteurized milk which has the big benefit of not making you dangerously ill.
Personally, the fact that I can pasteurize raw milk myself, and I can physically see there isn’t puss and blood in the milk that has been bleached due to high volume production and borderline animal abuse is a major bonus. But that’s just me.
This is one of the best puns ever. I mean, EVER!
Konrad, many people who are lactose intolerant are able to drink raw milk because all the helpful enzymes that aid in digesting it have not been killed by pasteurization. Or, so I've read.
@@aleeevans5 There's definitely still puss and blood in the milk you pasteurized yourself. Which is just as gross as commercial milk
"Look at that. It's not white, it's cream. The colour of cream."
Can we get a poet laureate award for Brad Leone over here please?
Brad: right Claire?
Claire: 👁👄👁
Brad: well put Claire
the editing was so funny!
In India, with its warm weather the cream gets cultured in good 6 to 8 hours.. and the residual yogurty buttermilk is also not wasted. Add salt and cumin powder and it becomes a yogurt drink.
+viral patel the drink is called cha hz or something like that, am I right or...?
yes, that's true.
Leah NYC yes, Chhaas , you're pretty close!
I was actually wondering about this, because in Australia (where I live) it’s too hot In my kitchen to leave the cream out for 3 days, but 6 hours would be perfect. I’ve just made regular butter, I’ve never tried adding a culture before.
I live in Mexico, as you can assume in some parts we have a good amount of hot weather as well, what's the usual weather were you live?
please BA ive watched this video for like 10 times and never do i get bored of Brad!! hes got such an amazing personality. make more videos featuring him pleaseeeeeee
Actually what Brad said sounded more like "beuh" which is one of the words for weed in french (as in marijuana)
Louella.y LMFAO
That doesn't surprise me.
Louella.y mdr
Ghem Dr j esa ftgsf check
V. P.
Louella.y pour les québécois de souche c’est une expression utiliser pour qualifier un policier. beuh/boeuf.
“I kinda wish we did it that way for the sake of...... I dunno, who cares?” 😂 truer words were never spoken
More Brad. More shi-ba-ba-bum. More of whoever edited this.
“I dont really speak French, and I dont speak that well English...” 😂😂🤣
Edit: damn. Didnt know loads of people like this comment!
He speaks jersey tho 😁
i don’t speak no good
*BeUrRe*
BÖ-
He speaks Yoda?
Would love a netflix cooking show with this guy.
By far the best show on BA. More Brad! Yogurt next maybe?
this guy needs his own show
"Hey, Vinnie. These people don't realize I have my own show. Whatsup with that?" Hahaha.
Chris Whatley what he means is Brad should have his own shit, not bon appetit. So his own channel and sponsers and revenue.
I DEMAND SEGMENTS TWICE A WEEK.
Bryce make a petetition
He's a busy guy. There's no need to rush him.
I feel like Brads chaotic energy would be much lessened if not for the editing. Props to editors and Brad for making the perfect team 😆
more of this guy please!
These segments with Brad are always so fun and educational. The editing is fantastic as well. Would love to see more of this!
Brad is the cool uncle that you always get excited to see at family events
I want to start making cultured dairy and it's fun to watch old videos of the test kitchen. So much has changed! Watching this in 2020 thanks Brad!
ma boi Brad, fuck yeah
6:55 good brad + Claire time, albeit too short
5:23 Gaby (ga-baaaay!) cameo
I appreciate Brad as both an organism and an experience. Everyone should have a little Brad in their lives.
Brad makes cooking so cool and fun. Love watching him cook. Learning so much with big smile on my face. Thanks Brad!!!
The editing made this vid very funny and enjoying to watch!
Brad is great. Funny edits were great.
Brad is so awesome. "okay, k , so" . I just love his energy.
the editing on all of these videos brings me so much joy. Mad props to whoever edits!
this guy is hilarious. I've been watching his stuff for almost 4hrs straight
I love this man! Great editing, you should do this more often!
Whoever edited this! I love the quickie at the beginning! Thanks! 0:07
The sound effects always make me giggle, I love them!
I need more Brad
This guy is amazing hahahaha. So entertaining. The editing was great too!
Killing it with the sound effects. Great vid.
I've been watching cooking shows since i was 3 years old. emeril, molto mario, good eats, 30 minute meals, barefoot contessa, etc. this show gives me that feel good learning experience the food network lacks nowadays and has that quirky 21st century twist. cool editing, relatable and genuine host and great concept of using living cultures and ingredients to enhance your culinary wisdom.
cheers to you, bon appetit. give this man another show or a second season PLEASE.
"I need a cream guy"??!!
Hilarious.
More Brad pls.
Just finished up all 38 episodes of Brad! Definitely need more Brad... I mean, who's better than him and Vinny?
I love the sound effects and images in these videos- give me a giggle!
Do they not own a rubber spatula to scrape the jar
JackyWang7321 yeah, it's the one he was using to press the buttermilk out of the butter
Who’s rewatching in December of 2019? I love all of them.
I’ve been binging Brad just because he’s so great. I think I’ve watched pretty much all hai videos and this might be the first one I consider making haha
I love all the sound effects and all of Brad's babbling, he's hilarious
"Hey, I heard you got some raw milk."
"If I did, how much would you need?"
"A gallon."
"What, are you a cop or somethin'? Yo, Vinny! I smell bacon. You smell bacon?"
Brad reminds me of Andy Dwyer
I just discovered this series and now I can’t stop
We love you Brad! My kids and I watch your videos all the time.
Gabby looks like a baby in this video 😭. I love how Clair is just like 😮 camera, why?
The editing 👌🏻
Brad is my favorite on this channel. I love his sense of humor and goofball nature. He reminds me of my best friend
I f'kin love Brad, I can't stop watching these
Need a video on that ranch recipe!
Raw milk is no longer illegal in Utah! Represent!
watching these and then the newer episodes, it's amazing how the editor has evolved the style over the last 3 years. and these were pretty good to begin with
His personality is DYNAMITE!🙌
am i the only one who noticed the quick, perfect 250ml pour?
I had to watch the video over just for that and damn
New drinking game: take a shot every time he says “vinny/vin” or “bud”
So you're telling me, I've been watching this show since 2016?????...4 years flewwwwww bbbyyyyyy
editing is insane! LOVE IT
Bonjour ! Fun fun video ... keep making them :) I want to try making butter as you describe. I live in Sydney Australia and I can't find similar type of cream. I found sour cream with 36.9% fat .. would this work in a similar fashion ? I do have the kefir :)
OMG brad got me like 😍😍😍😍
Brad, watching you gives me life.
The sound guy for bon apetit really just lets loose on this series😂
Lol why do the editors sometimes cut what Claire is about to say
The editing on this is gold
I love your video! it's fun and informative and better than the other cultured butter recipes I watched! thank you. new sub ❤️
Watching each of the videos is what a really good acid trip sounds like
I think, I've never actually been on acid
This was unbelievably fun to watch.
"ok" "k" "so"
The best thing is knowing you can laugh while watching a cooking channel, love the edits!! ❤️❤️
Editing hilarious as always. Ending on "I need a cream guy" LOL
If you wash the butter with a salty solution of water, or even brine, the water in the butter will be drawn out better.
just4fun620 good to know!
The sound effects!!! I'm crying!!!!!
Who edits these?! I'm living for this. Literally binge watching.
If I was approved for make-a-wish I'd wish to hangout and cook with Brad for a day. His personality really brings joy to my heart
It's stupid that raw milk is still illegal. The farm that I buy mine from under the table tests their product more than twice as much as the milk that gets sold in grocery stores and if there's anything wrong with any of the milk then they test all the cows and stuff. There's nothing bad about drinking raw milk if its tested properly.
weaselmaster98 because responsible farming like that takes more effort and likely costs and people are lazy and cheap. I'd totally have raw if I could find it.
I hear comments like this in a lot of different fields. Oh its tested so it is ok surely. It's actually quite a naive and ignorant opinion. Tested for what? What is it not tested for? What gets through the gaps?
If it was so simple to just say oh its tested then it must be safe then we would certainly be doing that instead of pasturising the milk. Theres no "Big Pasturisation" conspiracy at foot here ;-).
There's also a lot of misinformation spread by the Organic Mafia that somehow pasturised milk is the devils drink and you should avoid it. They are devotees to the naturalistic fallacy and should be dismissed like the cultist zealots they are.
Often testing has pretty large blind spots. I have similar coversations on testing of blood for donations and the two areas have similar blind spots. A lot of the tests involve testing for large organisms that are easy to detect such as bacteria or fungus. Viruses are typically detected second hand by actually looking for antibodies against the virus.
Problem is with looking for antibodies is that they take time to build up to a measureable amount. So its entirely possible for your milk/blood supply to have a virus in it and the tests will show all clear.
I like raw milk and have never gotten sick from drinking it. I don't care if it isn't perfectly safe. I once got food poisoning in France & from eating out in the US. Neither experience has encouraged me to live under a rock. Additionally, since the invention of pasteurisation, there have been great advances in refrigeration, microbiology, & supply chain management.
@@christopherdine1258 Late to the reply, but I must say, if there is an issue with drinking raw milk, why is the US one of the few countries that have an issue with raw milk? When majority of the world consumes it, any idea that it's harmful is thrown out the window. The sole reason it is illegal is when large scale dairy farms started to grow, they didn't want to spend the extra time/money on making sure raw milk was safe, so they did it the cheap and quick way. Same goes for how we raise many animals. The only reason it's STILL outlawed is that too many people are unaware it's safe, and wouldn't want to consume it. Not to mention most lower class citizens would never be able to afford it anyways. Milk is expensive enough as it is now.
@@xleaguex2655 the majority of the world doesn't treat their sewage properly. Using that as a reason is nonsensical.
Safe? Tell that to the family of farmers who got Hendra through the raw milk they we're drinking.
There's a difference between safe, unsafe, and higher risk. People can drink raw milk and have no issues. Same as smokers can smoke and not get cancer.
I can't speak for America only Australia. Milk is one of the cheapest things you can buy. Between bread and milk they are the cheapest at our shops.
Milk is just like any other animal product. Cook it.
Brad looks like Armie Hammer if he's a hipster.
Insult brad like that again and we're going to have issues
Ive been having a hard day and this damn silly ball of happy had me smiling in 10 seconds. Thanks.
I just, did this, I expected it to be one that I put in the fail column....it is amazing. I can’t wait to make it again thank you Brad!
