Divide the tracks into two separate left and right tracks. Then fade in one track, and fade out the other and your sound/music will travel from one ear to the other (left to right or whatever).

From the manual "The Scrub Ruler is off and not displayed by default in Audacity. You can enable it in Interface Preferences by selecting Show Scrub Ruler in the Timeline section."
