Just made this this evening and it truly is as easy as it looks! Great recipe. Texture of the pasta was perfect. I used a regular pizza cutter though then a fork to seal.
I've watched this over and over about 20 times in a row because it's just that beautiful. SO MAKING THIS

Dude, It's a brown butter sauce. It's supposed to have that much butter, cause it's the base of the sauce. If that's not your thing though, you _could_ toss them in garlic sauteed in olive oil, with some red pepper flakes, parsley, and fresh lemon, but IDK how that would work with the butternut squash.

the cactus club recipe has olive & truffle oil drizzled on... I know that doesn't sound so much better but it isn't sopping wet so maybe that's preferred? I know it's been 5 years since you commented, did you ever make the recipe?

Put a little dribble of water between the pasta layers. Dip your finger in some water and run it across where the seams will be. It'll help hold the pasta together better.

I made this exact recipe and the dough was very heavy and gummy?? I rolled it very thin but it was gross. I consider myself a good cook but not a pastry or baking guy. Can someone guess what might have gone wrong? I also had to boil water in a kettle, add to a bowl, drop in the ravioli and finish cooking on high i the microwave as I didn't have a pot for my stove top. Is is in the cooking?
