To remove the bitternes of the cucumber, you need to cover it with salt, for at least 40 mins, and then rinse it, it removes the vast mayority of bitternes

As a gardener my best guess on the cucumber is that it was a pickling variety, meant to stay small. Once cucumbers start to grow past their peak eating size they get more bitter as they focus their energy towards seed production. I too, have had the experience of “why is this so bitter!?” I’m sorry you had to subject your taste buds to that, June 😂

Yes,they get bitter when they are past their prime & going to seed,the bitterness is a way for the plant to protect the seeds being eaten by predators.
I was shocked when they said it's a kirby, those are supposed to be much smaller at prime eating size!

Please keep these episodes in June’s kitchen. I love June in her own element. The setting is so great. It adds authenticity and depth to the viewing experience. Delish kitchen experience is very watered down.

Is anyone else deeply upset that June didn't have onions, and a sleeve of garlic to work with? But yet again, June has wowed me with her creativity, and seemingly unending skill.
I hope this doesn't sound weird, but June looks a lot happier in this video and I'm excited to see it. In past videos, it seemed like the burnout was real. Which is fine and normal. I just really hope she found some balance and got a good break in there and maybe a nice vacation. ❤
Her mother died a little over a year ago, grief is heavy. She communicated with her boss about burnout, turned down a project that would have been hugely demanding for embarrassingly low pay, and she was fired just last month. I unsubscribed from this channel, where they didn't truly appreciate her, just wanted to use her.
We grew cucumbers that ended up extremely bitter a few years back. After much thought, and changing their growing environment the next year we came to the conclusion that the cause of the bitterness was the plant receiving too much sun while it was growing. Because the summer sun was on it for almost the entire day it’s like it concentrated the bitterness. When we moved the cucumber plants the next year to a much more shaded area the cucumbers (grown from the same seed packet) were SO much tastier, and not bitter at all. I think also if the cucumbers are left to grow too long on the vine it contributes to the bitterness as well, but I couldn’t guess on what causes that part.
Cucumbers grow bitter when there’s too much stress on the growing fruit. The larger the cucumber, the more nutrients it needs, the more stress the plant is under to deliver those nutrients. The result is that larger cucumbers are more bitter.
Also, the bitterness in cucumbers comes from the skin. Larger cukes have thicker skin, which makes them bitter.
in my experience it can be two things: too much heat and/or the cucumber is too mature and becomes bitter to prevent being eaten so seeds can develop
I liked Aaron and June interraction in these series and I will miss him. I wish both of you a happy life.

The things I've learned from Jun: process your produce as soon as you get home if you can, taste everything and go with your instincts, save your meal odds and ends for toppings or "take two"s, and that's just in this episode.

just a hack of mine to save those extra bitter cucumbers that tend to find their way to us somehow, first I chop off the tips and use it to vigorously rub the sliced ends of the cucumber which draws out alot of water and foam which I rinse off then i slice it up and soak it in heavily salted water for an hour and that usually takes out the remaining bitterness, I tend to buy alot of em since they're almost always needed in my daily salads or shakes and such a pretty handy hack for someone who doesn't like to throw away produce

My favorite moments of June have always been her devotion to Fred and how she exquisitely describes things as plastic tasting but not in a bad way or middle school popular girl smell or the taste of the only thing you liked from that blind date you were pressured into but YOU know exactly what she’s talking about. It’s they kind of story telling that writers strive for. Love you June. I hope you’re hinting to a bigger place and not leaving us.

My list for June would always include eggs, peanuts, onions, garlic, different types of beans or grains, something creamy (tofu, avocado, some creamy yoghurty product), some acidic thing like tomato, lime etc and probably herbs and a cheese, because it makes her so happy. After that I’d be selfish and probably go mushrooms, chips, fun veggies and a fish/meat-thing

June! A great gardening trick for turning bitter cucumbers into sweet ones: Cut off the end (before peeling) and rub the open ends together in a circular motion about 4-7 times or until foaming stops. Compost the end, wash off remaining cucumber to remove the foam and then peel and enjoy! Even cucumbers that are deep in the bitterness pit can be helped by this, but some may be too far gone to expect greatness.
I love Fred! He seems curious about what you're doing. In your next kitchen you should try a chair for him so he can be cozy up high and watch everything ❤
For the cucumber: things that make them bitter include letting them ripen too much or the cucumber not getting enough water. Variety can also affect flavor. As someone who grows cucumber in my garden, these can be issues. That particular cucumber also looks like an overgrown pickling cucumber which might be why it’s so bitter. A tip: make sure any cucumber you buy is completely green with no yellowing or yellow striping. Cucumbers turn yellow as the seeds mature. Cucumbers with yellowing are going to be bitter with tough seeds.

Place the cucumber in a cup vinegar, 1/2 cup sugar cup water, salt and pepper store in fridge, you can add onion and or peppers, you can even put a bit of dill to it makes a wonderful salad

You prounounced Khakhra correctly 🙃 its a snack (basically Indian roti/chapati crisped up to crunchy texture) so excited to see what you do with Nylon Khaman (it is a gujarati snack (Popular in west side of India) 😁 (writing as I watch 😊😇)
...so for the Nylon Khaman...once steamed I generally add a mix of water, sugar and citric acid..then temper with oil, mustard seeds, hing and slit whole green chillies...garnish with cilantro & grated coconut...in a way it supposed to be spongy wet and taste sweet, savory with hint of tanginess..pomegrante instead of strawberrries is what I have tried with that 😊

I love watching June and Aaron on Budget Eats! She's inspired a lot of my "desperate meals" as they call them when I get down to the few dollars before the next pay day and not much in the pantry to work with. I love seeing Freddy's critiques as well. Reminds me of my dogs who are not afraid to sniff/gag at whatever I put in front of their faces lol.
I love the natural conversation and genuinely intriguing nature of this show. There is nothing manufactured feeling about it which makes it enjoyable to watch for an hour+

My secret on the strawberries, if they’re looking a little funky bring them home and immediately wash them in a mix of vinegar and water, then rinse well and allow them to fully dry spread out. If you can clean them and dry them it really slows down the molding process. Just won’t work if they’re already mushy though. I do that with all my strawberries and it really makes them last longer but it’s important to rinse them wow and you also let them dry spread out and not in a bowl that way they are t wet when you put them away. The vinegar would also work well for those tomatoes as long as they’re not soft you can do it.

Cucumbers tend to grow bitter when the plant is under stress from inconsistent water, fluctuating temperatures or poor soil.
