BANARASI KADDU KI SABJI
Preparation time : 15 minutes
Cooking time : 20-25 minutes
Servings : 2
Ingredients
2 tbsp Mustard Oil (सरसों का तेल)
2 Bay Leaves (तेज पत्ता)
¼ tsp Fenugreek Seeds (मेथी दाना)
1 tsp Fennel Seeds (सौंफ)
½ tsp Onion Seeds (कलौंजी)
1 inch Ginger - chopped (अदरक)
2-3 fresh Green Chillies - chopped (हरी मिर्च)
2 dry Red Chillies - broken in half (सुखी लाल मिर्च)
2 ½ cups Pumpkin - cut in big cubes (कद्दू)
½ tsp Turmeric Powder (हल्दी पाउडर)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
¼ tsp Coriander Powder (धनिया पाउडर)
Salt to taste (नमक स्वादानुसार)
Water (पानी)
2 tbsp Jaggery (गुड)
½ tsp Dried Mango Powder (अमचूर पाउडर)
2 tbsp Coriander Leaves - chopped (धनिया पत्ता)
Process
In a kadai heat mustard oil and add bay leaves, fenugreek seeds, fennel seeds, onion seeds, ginger, green chillies, dry red chilli and saute for a few seconds.
Now add pumpkin and saute for a minute then add turmeric powder, degi red chilli powder, coriander powder, some salt and mix everything properly then cover and cook for 10 minutes.
Remove the lid and stir it once, now adjust the salt, jaggery, some water then cover and cook for 4-5 minutes.
Remove the lid then add dried mango powder and cook for another minute.
Now finish with coriander leaves stir it once and serve hot with puri.

A very fulfilling recipe after a long time.
So many positives to take from this video :
1. The star of this recipe is a vegetable which is often ignored by celebrity chefs.
2. This is not a restaurant or street style recipe, rather a recipe from day to day life.
3. The entire recipe is properly explained without any additional drama in around 10 mins which makes it easy to watch.

This is what I was waiting for! A channel where they show genuine local recipes in India 😍😍 Because oily fast food recipes are kinda cliche these days. Everyone makes veg Manchurian. Not many can show panasa pottu or something traditional from other places. Amazing, creative, and brilliant! Please keep going!
Chef your videos are really heart warming. I have just one suggestion, instead of using saunf, kalanji, etc separately, we can also use something called "Panch Phoran". It will contain all these stuffs.
Panch poran has mustard seeds as well which is not really added in Banarasi kaddu so i think we must stick to just methi, saunf, kalonji and jeera.

I m Banarasi at heart...n this sabzi with kachori is banarasi breakfast served in streets at Banaras. It used to be our staple breakfast been in BHU. Saari yaadein tazaa ho gayi!! Thank you Chef😇😊

Rocking RB! My mom cooks it in similar way and it always comes out amazing. The dish is all about counter balancing ingredients, it has every thing, bitterness, sweetness, salty, tangy. In short it can be summarized as a freshly made achaar or something like achari aaloo. A slight innovation, try using boiled sweet potato in the same dish. You may skip the gur part and if you have curry patta, it will come out amazing. All about masala magic!!! Keep more coming.

Even in Karnataka we cook this sweet pumpkin (we call it sihi kumbala Kai ,kumbala Kai means pumpkin,sihi means sweet ) , we add only mustard , urad dal ,channa dal , hing , curry leaves, chillies and this veggie, salt cook , grated coconut in the last .very simple recipe

In Karnataka, this is the combination with rice roti (akki rotti). Instead of amchur we use lemon juice and we add 1/4 cup freshly grated coconut at the end. For tempering, curry leaves also used. Some use asafoetida also.

Anyway, whoever Bangali is following the spices carefully, knows the saunf, methi aur kalonji is the main ingredients of panch foran. Panch foran is the monopoly. 😍
This recipe is similar as Bangali mishti kumror ghonto, except the aamchur part. Use 1 month old more red kaddu (just don't keep in a hot place), you won't need to add any sugar or jaggery. The best ghonto in any puja..😋

We make this with Aloo n Yellow pumpkin mix, yes with panch poron ka tadka, ginger n green chillies, sabut red chilli.... Cook this in iron kadhai...... And we eat this sabzi with club kachori.... Yummy yummy😋😋

I make this with a bit different phoran . Only methi and hing and green chillies as phoran. Rest all the process is same and cook it until smooth mashed paste . It tastes amazing

Tried @ Home🏠.... tests awesome. Odisha mei alu , chana daal ,kaddu ki gravy bali curry banti hei. Puri,parathe ke sath bahut achhi lagti hei. Request hei ki Odisha ki dish bhi banaea. Aap ki Chhenapoda bali video dekhi hei.
