100g ketchup
100 sugar
75 ml white vinegar
1/2 tsp salt
1 tbsp corn flour
175 ml water

I'm actually shocked by the simplicity of this. For years I've been paying a fortune for these at my local Chinese takeaway. Going to have to try this myself. What was reassuring to see is the few ingredients you used. Often when we see people making these type of dishes or meals they use tons of different ingredients. Thank you for enlightening people with simple steps to make something which costs £7.90 at my local Chinese takeaway.

Turned out exactly like they should! However, I did them in dripping as I'm avoiding vegetable oil. Made them crispier too I believe and less oily.

This recipe is great. It is like having from the takeaway but better. I added a little Chinese five spice into the batter and it gave an amazing fragrance to the chicken balls. Cyber high 5.
I add a little 5spice too but more for the flavour than the fragrance.

JUST SAY VERY EASY , FOOLOWED THE SAUCE RECIPE BUT THINK WOULD BE BETTER 5ml LESS VINEGAR , DOUBLED THE MIX AND CREATED 8 SUACE POTS ( 40ML ) GONNA FREEZE THEM SO SUACE ON HAND ANYTIME REACON TOTAL COST TO MAKE WAS ABOUT 40p A POT TO MAKE SO CHEAPER THAN TAKEAWAY FOR SURE AND ONLY TOOK 5 MINS AND 8 PORTIONS GREAT JOB

Thanks. Looks great. Never deep fried before. What oil do you use for the frying? What do you do with the oil afterwards?
we use vegetable or sunflower seed oil. After we've finished cooking we allow the oil to cool down the strain it to get any bits out then put it in a suitable container to use again. We use our oil about 3 times before discarding it. Hope that helps.

I use pineapple juice, lemon juice, honey, and tomato ketchup for my sweet and sour sauce. The ketchup for colour and it thickens it, but you could leave that out, not sure why sweet and sour sauce has to be obsessively red. Honey helps thicken it. Ages since I made it, I might have added a little corn flour. You can add a splash of white wine vinegar if you prefer it a little more sour.

This looks good and all but its quite misleading. You are using chicken breast when it clearly states the balls of a chicken in the title.

Mate these are awesome👍 this is my go-to now (I can even do it with a hangover! If I’m feeling classy I chop some pineapple chunks and green pepper and add it to the sauce while it’s simmering, works a treat😁

I never tried. i would think as long as they were defrosted fully and reheated correctly it won't harm you so its worth a go.

Extra crunch
it is a fairly common practice. it helps keep the batter crispy for longer after its fried. i think the reason it does this is the second fryng drives out moisture that was left after the first frying. Hope that helps

yes 175ml of water but if you want to do it by weight it's 175g. hope that helps.

How long do you cook them for each time?
Until they are golden brown in colour this normally takes 3 or 4 mins. and the second frying takes about a minute. hope that helps

Make sure the oil is up to temperature that makes a difference and place finished balls on kitchen paper before serving, hope that helps.
What is the reason for 'second frying' them? Can't you just fry them for a bit longer the first time round?
by adding a few at a time you're avoiding the chicken balls from sticking to each other once they got that golden light brown color she adds all them together now they aint gonna stick
Hi Scott, your comment got me thinking. Daphne comment is one reason, also I know double frying makes the chicken balls more crispy, but why. This is what i found on the internet "as moisture in the middle of the food drifts to the surface when the food cools; making the surface gets soggy again. Double frying helps to get rid of this moisture

at 180 c why do I get a wok full of oil froth when I put my balls into the oil? It's impossible to see them cooking, how can I avoid this happening? please help me.
Hi try and reduce the oil temp down a little ...say to 170c and see if you get on better. But if you reduce the temp too much, the balls will bubble up less but the balls will be greasy. Hope that helps
Instead of tomato sauce try sugar melted with water and cider vinegar with red food dye for the true texture and taste 😋

Pineapple juice is standard I think, but this version from Rough Diamond is still really good and a lifesaver if you don't happen to have anything pineapply at home!

Oil was not hot enough. At 180 c they will sink and then rise to the top in seconds. Hope this helps.
