Recipes:
TOMATO KETCHUP (modified from Lauren Allen's recipe on TastesBetterfromScratch.com)
- Canned tomatoes (2 quarts)
- 1 onion (diced)
- Salt (2 tbsp)
- Sugar (3 tbsp)
- Dry mustard (2 tbsp)
- Allspice (1 tbsp)
- Pepper (1 tbsp)
- Cinnamon (1 tbsp)
- Cloves (1 tsp)
- Nutmeg (1/2 tsp)
- Apple cider vinegar (1 cup)
- Garlic
- Cook onions for a few minutes until translucent, then add salt, sugar, spices, garlic, and canned tomatoes.
- Gently simmer for about 10-20 minutes.
- Strain the mixture to remove any solids/tomato skin.
- Add vinegar and continue cooking down to preferred consistency. Add more water if it becomes too thick.
MUSHROOM KETCHUP (Kind of an amalgamation of multiple recipes online)
- 1 onion (diced)
- Mushrooms (500 g, any varieties you like, don't waste nice ones on this though)
- Salt (25g)
- Malt vinegar (60 ml, can really use any vinegar of your preference)
- Ground nutmeg (1/2 tsp)
- Allspice (1/2 tsp)
- Cinammon (1 tsp)
- Cloves (1/4 tsp)
- Chop up the mushrooms and mix with salt in a pot.
- Cover and let sit for 8-12 hours.
- Add the rest of the ingredients to the pot and bring to a boil.
- Reduce heat and simmer for 20-30 minutes.
- Let cool, then drain in a fine colander or cheesecloth. Be sure to squeeze the solids to get all the moisture out.
- Store in sterilized jars for long term storage. Use the leftover mushrooms in any number of ways. I've also heard about people dehydrating them in the oven and blending the dried up mushrooms into a sort of mushroom seasoning salt.
WALNUT KETCHUP

BANANA KETCHUP (based off a recipe from Vanjo Merano)
- 1 lb saba banana (can use any other varieties)
- 1 onion, diced
- 1 cup white vinegar
- 1 lb brown sugar
- 3.6 ounces salt
- 2 chili peppers (finely diced)
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon paprika
- 3 cloves garlic, minced
- 1/4 teaspoon cloves crushed
SEAWEED KETCHUP
*I think this needs more salt and/or sugar/vinegar content to qualify as a proper ketchup with a long shelf life. But it sure tasted good :). Feel free to use water instead of seaweed broth, that's what I would've done if I didn't already have a giant pot of broth I'd just made. If you do try this or experiment with it, I'd love to hear about it!
Ingredients:
- 3 tbsp sesame oil
- 2 cloves garlic
- 1 anchovy (I used dried and removed the head and guts. These are commonly found in Asian grocery stores for making anchovy stock, but you can use any kind of anchovy)
- 3/4 cup seaweed broth (can substitute with water)
- 5 sheets gim (AKA nori, roasted seaweed)
- 1 tbsp rice vinegar
- 1 tbsp mirin
- 1/4 tbsp kosher salt (can salt to taste or replace with soy sauce to taste)
Instructions:
- To make broth, soak a large piece of kombu in 3 cups of water for at least an hour, then gently boil for 10 minutes. Remove kombu.
- Fry garlic and anchovy in sesame oil in a pan.
- Pour in the seaweed broth and simmer for a minute or two.
- Add the gim in torn pieces.
- Remove anchovy, let cool, and transfer to a blender, food processor, or immersion blender.
- Add the rest of the ingredients.
- Blend the mixture until it has the consistency of ketchup.
- Adjust any seasoning as you wish.

Crying over a video about ketchup wasn’t how I expected to start 2024, but I’m not complaining. This is absolutely stellar-I’d love to try some of these recipes! Also, for anyone wondering, I cried over the banana ketchup section. I’m a sucker for scientific ingenuity.

This is the first video I've seen from your channel. Usually I don't like a lot of gimmicky production bits but yours is cute. The history of ketchup was interesting. I'm curious what else people do with green walnuts beside make ketchup. I've made mushroom ketchup several times and love it! I put it in almost every beef dish I make, except stir fries that get soy sauce. The best thing about it, though, is that you can but the leftover solids in the food dehydrator and grind it up to make mushroom powder. OMG! I like that so much that last time, I just very slowly simmered the whole pot of ketchup down over a few hours, trying not to cook out too much flavor, until I could spread it on sheets of parchment and dry it out. That was even better.

This was great! Drawing the line between all of these diverse sauces as being essentially umami boosters made a lot of sense to me. With the mushroom ketchup, you can dehydrate the leftover mush, powder it, and have a seasoning that's great to add umami in stocks and broths, put it on eggs for the mushy flav. It's quite versatile, multi use, and waste free. It's up there with survival foods due to this.

The leftover mushrooms that get strained out of mushroom ketchup can be dehydrated and ground up into a fine power, made into a spice. It is good on eggs and red meat. Lasts longer than the liquid ketchup and tastes good, just watch how much you add since it has a lot of salt.
