    Many people ask me why there are not many traditional Georgian desert recipes. Few are made with locally grown grapes and nuts. Most popular are pelamushi grape desert and churchkhela candy. Yes, you will find cakes and pastry like everywhere in the world, but mostly Georgians enjoy seasonal fruit.

    I totally understand, why eat anything else than fresh ripe fruit, nothing can beat it. It is true that some desserts can be very good and creative (and technically challenging for chefs) but I never got the obsession we have to eat always flour and sugar. Many dessert recipes will be cakes or pies topped with fruit: instead of eating the fruit, we put fruit and sugar and butter and flour and eggs, which is of course good and tasty but also an overdose of elements that do not make more sense at the end of a meal.
