  • I love steaks and also love coffee, usually when you eat in a restaurant the end of the meal you get coffee. This is the best drink to finish up a meal or start your day. Today I used the most expensive coffee and dry aged steaks with it.

    When I was a butcher a guy bought a full rib roast but left it in our cooler. Periodically he would come in to get a steak off it. He just wanted us to dry age it for him at market price. Genius.

      @Hmmmmmmmmmmmmmiam the meat in grocery stores aren't real anymore their lab grown I don't know about all but a food guy came in to my store I was a manager of a bunch shop he told me my ribeyes looked great as I cut them that morning he told me Tyson which is who I was getting my meats from is now doing lab grown meats they hook a bunch of stuff to organs and grown fake parts it's not real it is going to gives is cancer and kill all of us not just meat it's all the food at the store almost all

    Please note that it is hard to source where Kopi Luwak comes from, whether it was sourced ethically or not
    Lots of Kopi Luwak comes from civets that were caged up and only fed coffee cherries, often in poor conditions

    The production of Kopi Luwak typically uses caged wild civets to scale up with the demand, feeding them only coffee cherries.
    The resulting coffee, according to most coffee taste testers(Including James Hoffman) report that it doesn't even taste good; especially not nearly worth the cruelty done to produce the coffee.

      As far as I can tell, many get fed the cheapest coffee beans (Robusta) which are easier to grow, more resistant to disease/weather but gives a more bitter tasting coffee than you typically get with the more expensive arabica coffee beans (I do believe that some Civet coffees may use arabica). Apparently the digestion process removes much of the bitterness from the Robusta and elevates it to similar to Arabica at best but nothing special.

      Additional problem with the unethical practice is the forced coffee diet. Sure they eat coffee beans, but that's not the only thing they eat as part of their natural diet.
      With harvesting civet coffee bean, farmers cage them and only feed them coffee, making them weaker physically iirc.
      Then with the rise of "naturally harvested civet bean", wherein it's said that they're not caged or force-fed, most of the manufacturers just label them as "ethically harvested" even if it's not really the case.

    I'm from Indonesia, I love coffee and steaks... In my opinion, Indonesia has a vast amount of great tasting coffee beans from different regions of the archipelago, and kopi luwak is not on the list, even for the wild coffee luwak 😄

    Salt pepper and garlic powder has changed my life! Who wouldve thought it was so easy to season a steak. Used to do italian dressing overnight, but that is nothing compared to salt pepper garlic powder and letting it sit for few minutes before cooking. Guga has opened my mind to so much when it comes to cooking. Ive even gone from retail to looking for cooking classes and thinking new career path. Thank you sir!

    Just FYI, Kopi Luwak is considered largely an unwanted oddity among actual serious coffee people (whether it be roasters, cafes, baristas, or drinkers). Coffee enthusiasts value traceability to a coffee's growing region (often traced down to the specific farm that grew the coffee), along with the care and variation that goes into processing the coffee beans (different ways of drying and fermenting the beans), and then also roasting light in order to preserve the coffee's natural characteristics and keeping any burnt flavors out. Kopi Luwak can be considered a variation in processing, however, there is no solid evidence that going through the digestive tract of a civet is actually making a significant improvement in quality or taste of coffee. There's also little attention given to transparent traceable origin to the farms that grew the coffee, allowing for rampant counterfeiting. Not to mention that the majority of farms that produce coffee this way will capture and cage wild civets under questionable conditions, because that's really the only way to produce Kopi Luwak to keep up with current demand, at least for the farms that actually give you the genuine poop coffee.
    I'm personally open to exploring scientifically whether the process of being digested by an animal really can make a difference in taste or quality. But as things stand, people are far too willing to buy into Kopi Luwak just for the novelty and exclusivity factor, remaining completely ignorant of the standards and practices being employed by actual specialty coffee farmers and roasters around the world, which are actually verified as making real and meaningful differences to the flavor and quality of the end product.

      I mean... does it really matter, if the end result was it being used to coat a steak? The idea behind a coffee grinder is to get an even grind for maximum yield and flavor for drinking, but that's not what happened here. Honestly, the blender was fine.

      Back in the olden days the coffee bean pickers were never allowed to try the coffee beans they picked but one of them noticed the animals eating the fruit and that beans were in the poop so he decided to clean them and give it a try and things progressed from there.

      Most coffee taste testers also report that the coffee itself doesn't even taste good.
      It's really just overly hyped mid-tier coffee that demands cruel practices to produce.

    I do have one question about a lot of your dry age experiments. You always talk about airflow. Why didn’t you put the coffee on the bottom and then put it on a cooling rack like the other one? The oxidation was really bad where it was up against the parchment almost wonder if that is bad for the steak because of the lack of airflow

    Guga I truly love your content.. I used to be one of those people who would go down the rabbit hole on youtube not watching anything specific, but now there are really 4 content creators who I wake up to see if they have posted and watch every second of every vid they post and you sir (and crew) are one of the top ones. You alone have help my grilling game go from "oh yay steak day" to " I need steak everyday" I went from your basic not knowing really how to cook a steak correctly and either burning the hell out of it or it still moo'ing or having no flavor / too much of the wrong flavor to now finding balance.. I have honestly two real wishes when it come to your content. 1. Meeting you and eating one of your amazingly good looking steaks in person. 2. Seeing you do more smoking of meats. Either way...I appreciate all you have done for the steak community.

      I discovered Guga at the top of the month and have been binging videos for weeks. 😂 In addition to the food science and grilling technique, he leaves world class finger food as easter eggs for side dishes. I am looking forward to buying my first smoker next year so i can try some of these recipes, chef's an inspiring creator, top notch

    There should be a control using regular $10 coffee from the supermarket.
    I suspect it will taste the exact same as the Kopi Luwak (civet coffee).

    Hey Guga. Please re do this experiment but use a specialty Gesha bean and invest in a descent coffee grinder and go way finer on the grind. I think you would get much better results. And it would be way easier to cover the steak completely.

    I think this would've been better done grinding the coffee in a coffee grinder rather than a blender. You'd get finer and more consistent grinds that would've been a lot easier to work with.
    The bigger issue, though, is where was your coffee sourced? Hopefully before selecting a coffee, you researched the brands to ensure the coffee you were getting is 100% "wild sourced" or "ethically sourced". Since there are Kopi Luwak plantations in Vietnam and Indonesia that keep civets caged in deplorable conditions and fed only the coffee cherries. It's one of the reasons there have been efforts to get an international trade ban on Kopi Luwak.

    Kopi Luwak is a famous due to the 'process' used , but not 'most expensive' coffee. In 2023 Best of Panama Auction sold a natural process Geisha for $2504 per kilo ($1135/pound) The average price over the 50 lots at the auction was $868.22/kg. Kopi Luwak is unfortunately inconsistent as it uses a fermentation process which changes depending on the digestion speed. That said, it is an awesome coffee each time I have had it, but I do have a preference for the small farms of Panama and Colombia, just unfortunately don't have the level of income to support my coffee addiction 😂

    I would love for Guga to try one of my favorite ways I like to cook a ribeye.
    This is a reverse sear with a steak bacon bonus.
    Cook steak by sous vide or grill or smoke.
    After it is done cooking trim off as much fat as you can and cut up the fat into about pea size pieces.
    Render fat in cast iron until brown and crispy.
    Transfer crispy fat (steak bacon) to plate.
    Sear steak in cast iron with the rendered fat from steak.
    Top cooked steak with the crispy steak bacon.
    BTW... I pre-ordered your book and I have really been enjoying it. It is not possible for me to convey just how much I appreciate you (Guga) and your team!!
