Vegetarian side dish---Beetroot pachadi

    This is a simple vegetarian side dish using beetroots and yogurt.
    For this recipe you will need:
    3 medium size chopped or grated beetroots
    1 medium diced onion
    2 small pieces of diced ginger
    10 cloves of diced garlic
    3 sliced green Chili peppers
    2 tsp salt or to taste
    2 tbs water
    combine above ingredients in a pan, cover and cook on medium low until the onion and beetroots are tender.While the above is cooking, place 1/2c grated coconut in a blender and make a fine paste. Add water to this as needed to mix well. Once the beetroots are cooked, add the coconut paste, mix, then turn the stove off. Add 1 1/2c of plain yogurt to this and mix well.
    For thallup(fry mix to add to pachadi):
    Place 2 tbs of coconut or olive oil in a hot frying pan, add 1tsp mustard seed, 1/2 tsp fenugreek seeds, 3 chopped dried red chili peppers, mix well and turn stove off. Add 3 stems of curry leaf and add this to the beetroot pachadi. Mix well and enjoy!
