I am Brazilian and I am impressed with the work capacity, creatividada and inventive capacity of the Indian people having few resources! I admire you very much
Indians have good amount of resources maybe more than Brazilians.
No control over thickness of roti .It will vary with how resistive the dough is.
A stiff dough will give thick rotis and a soft one will give thinner rotis
Can think of putting some kind od a positive stop to get uniform thickness of rotis everytime .
Excellent idea to get the pressing force in the middle .This is a screw press .Keep improving it and launch a kitchen top model 👌 👏 👍
By using torque controlled screw driver for drive motor you can control the thickness.

Using plastic sheets for each pressing, is something which requires some patience!
Why not use teflon sheets to cover the pressing surfaces!
Sheet manufacturers can specify the adhesive or the chemical to do this.
The teflon sheets would have to be rough sanded to aid bonfing.

By making chapti groove in wood we can easily get same thickness or by providing thickness stops at the end of the lower plate. Just like seperators.
