    I made a 14 gal batch szomorodni from late harvest Furmint grapes: (prefered type for Tokaj) almost the same way like you did! This can be done only with white grapes...
    I pressed the whole harvest directly, so i've used just liquid to make wine, and the remnants went separately into another barrel to ferment & destillate it later. This fruit is a gem !!!

    19 days open fermentation could be risky. I open ferment 6 days for red, 4 days for white wine. I would prefer to remove stems before crushing. There is no spacing for carbondioxide cloud on top, 20% of the barrel should be empty. My method includes punching pulp top to bottom twice a day (as he does at fourth day) to keep the pulp wet during open fermentation.

      Nie ma różnicy czy otwarta fermentacja trwa tydzień czy miesiąc. Kiedyś zapomniałem o jednym winie (200 litrów wina w beczce) i stało tak przykryte ponad pół roku z owocami. Najlepsze jest to że wyszło 😂

      @@MESVideo сегодня отдввливаю Каберне.8 сутки.остаточная сахаристость 10.6%.изнаяальная 26.2%.завтра 9дней и на отстой.уже активного брожения не будет.как видно свои 16% сахара дрожжи съели.так что формула для винных дрожжей 0.7 справедливо.применял дрожжи после Саперави

      Kruk Krukov из Каберне, Муската и Изабеллы нельзя сделать полусладкое вино не добавляя сахар или мед, еще на активном бражении с мезкой, через неделю нет уже сладкого привкуса и если не снять вино через неделю, не слить и не поставить под гидрозатвор то вкус уже будет терпко горьким, косточка и кожура будет давать горчинку... но конечно кому то это нравится... но полусладкого без добавления сахара не получится

    Are you familiar with Aladasturi Red 2018 or Tsolikouri Orange 2018? I am looking for popular Georgian wines both red and white/orange! However, the white wine that I am looking for I want to be more yellow and cloudy without being too sweet. Same with red, not sweet. For reds, I am looking for something that is more of the fruit punch/ruby red see-through color rather than a dark red.
    I’m looking for the most traditional possible and something that is definitely popular for sure.
    Suggestions?

    really? in Romania we use similar technique every year. Thing is that you need an additional "press" to squeze out the juice. Usually I make every year 50l of wine. Sometimes sugar is needed to be added.

      Wine pressers are used in western Georgia. What differenciates eastern Georgian wine Makin form western one is the way we ferment our wines. In the west we don't leave skins and stems in the juice. Our wine ferments on its own and has less alcohol content in it.

    Well...Georgia might be a craddle of wine making and all..... and I would be intrigued to taste it.... but I am not sure I would enjoy this wine and here is why:
    - grapes are stored in plastic bags before crushing. What ?????? letting grapes sit in the plastic bags before crushing boost growth of all sorts of micro organisms in the warm and humid conditions. Bad idea. Period.
    - also it promotes oxidation which will induce reductive notes and brown pigment to the wine
    - Since I did not see any cultivated yeast innoculation, I would guess these guys are letting the indeginous yeast to take over. It might me a great idea in places like Georgia, or it might not. The problem is, you never know what yeast strain will take over, so the result unpredictable.
    - in addition to that these guys must be working with best grapes in the world (which I doubt) because they make no sugar nor acid adjustment.
    - Next .... Whole cluster fementation. Intersting. But I don`t really inderstand why they are doing it. It will definitely promote tannins and herbal taste, which is not necesserily what one is looking for in the white wine. (green stemps arghhhh)
    - then they let it sit on skins which is ok for orange wine (and stems, what????) for some two weeks and a half. Sort of extended maceration. Usually this techniques is used for red wines to apease the tannins. So, not completely fool but still I am not convinced because extended maceration needs little bit more time to smooth the harshness.

      You are a professional winemaker, I guess. Old, Georgian methods work well enough if you use old, traditional oaken casks or big underground earthenware "pots" we call "kvevri" , which host quite a predictable sort of yeasts, even when they are rinsed thoroughly ( believe me it is a backbreaking work if you have not got the luxury of tap water :D ) .When you pick your grapes at your own vineyard and immediately press them , bacterial contamination is not a concern. Adjustment for acidity is some years quite a problematic issue, especially when you do not posses special tools and KNOWLEDGE .. but believe me, in most households in eastern Georgia you will not be disappointed with homemade wines. At countryside, of course

    Я конечно уважаю предков, но... но вино у вас окислилось (это даже по цвету видно). Ещё на этапе давки винограда его надо было стабилизировать, потом белое вино по красной схеме??? хотя если у вас пониженная кислотность, то вам в кайф...

      Привет Саша. Не до конца процесс парни показали чуть с ошибкой, надо оставить см10 чтобы в процессе брожения вино не текло. После этого бутыли будут хранятся в прохладном месте, крышка не до конца(это самое важное взорвётся). С наступлением холодов вино очистится, ненужные вещества опустятся ко дну. До января месяца лучше не трогать, а в январе переливаем в других бутилах, процесс брожения уже закончен и вино готово, и кришку до конца можно:) потом уже по вкусу, вино можно переливать несколько раз для улучшения чистоты хотя технологический не рекомендовано, после первого переливания прямо в бутылках можно было. Но чистка такая ручная не позволяет так чисто переливать чтобы опять остаток не остался на дне. Если в январе почистить со специяльними фильтрами для вин то сразу в бутылках лучше, градуса больше сохранится. Надеюсь все понятно выложил. Приезжай на следующий год в Грузию и своими руками сделаешь тот процесс который интереснее тебе.

      @@user-sx5pv9lj6w то что парны показали это семейнный маленький выноградник, в любом регионе, главное осенью. Просто проявить желание присутствовать на сбор и все с удовольствием покажем. Я на западе к примему живу и все в деревнях имеем небольшие виноградники и в октябре месяце с друзьями, с семьёй делаем эту работу и отмечаем с застольем:)

      El método de los antepasados elaborar vino natural y casero. Además la uva está conseguida siempre por la vía ecológica sin interrupciones productos químicos y muchas veces llegan a conseguir la producción biologica(pues, a veces caen malos tiempos durante el año y luchar contra oidio y mildiu sin azufre y cobre es imposible, aunque estos dos últimos se consideran como productos ecologicos).

      Al parecer han hecho chicha.
      O Mosto.
      Vinificación en tinto, con sombrero de hollejos.
      Comenzaron con Kloeckera apiculada.
      Luego al tercer o cuarto día revuelven para oxigenar y comenzar la fermentación de Saccharomyces Ellipsoide... Sin clarificar.
      Con suerte llegan a ocho grados GL.
      No hay sulfitado ni se agrega vitamina B ni calcio.
      Es un mosto para consumir de prisa... Si no... VINAGRE.

      I'm waiting someone to respond you correctly but I think it has to do with the sweet components of the wine and maybe by aging it makes its own yeast..im just commenting so I can see the true answer

      @@goose8567 there is wild yeast on the skin of fruits, enough to produce alcohol, but you can't be sure how strong they can be, that's why nowadays you would usually add a special wine yeast
      sugar is obviously also in the fruits, but again - without measuring it, you can't predict how strong will the wine be

    Leaving in all the stems adds a bitter taste remove the stems first. If you take the finished wine run it through a still an you have grappa

      ~ Evidently you've never made big batches of wine. Taking the stems off of a big batch would take hours to do, and besides, the stems don't add enough bitterness for most people to notice. In fact, some bitterness is desirable. I make pear wine and I grind the pears, seeds, stems, and all, and over the years I've had a number of people tell me that it's some of the best wine they ever tasted.
      I grind all big fruit in a big meat grinder with the biggest open blade (i.e. two large oval openings). I pulse grind berries in a blender (barely breaking the fruit). I never boil any fruit or add boiling water to it as my experience has been that by doing that very often the wine won't clear. I usually follow Jack Keller's recipes to a T (his website address is: winemaking.jackkeller.net), except when it comes to his advice to boil fruit or add boiling water. I do it cold. It may take a couple of months longer for the wine to work off, but it tastes better (in my opinion) and it usually clears by itself (without having to add fining agents like bentonite or diatomaceous earth).

      Никогда 12-14 не будет таким способом. Что натуральное об этом нет разговора. Вы ровняете разные лиги. Двор команду и примьер лигу. То что делают ребята это хорошо. Но вин заводы, морани, например, с сепажем 3 виноградов или купажом от мастера. Да хотя бы с уровнем очистки не через марлю). Понятно, что всё это лучше помойки, что льют в массы, но и говорить о качестве высших сортов тоже нельзя.

      Почему? Это очистится при наступлении холодов. Всевина такого цвета изначально. Тот мутный цвет и содержание помогает этому соку винограда стать вином

    This grap is sweet, but not the best for wine producing! The best is Shani grap that growing in the west/south west region of Iran.The famous Shiraz wine made by this grap.The result is pure Black not Red wine!
