BREAKFAST - Peanut Butter Banana Oats
1/2-1 cup oats (based on preference)
1 tbsp ground flax
1-2 tbsp peanut butter
1 banana, mashed or sliced
LUNCH 1 - Lentil Salad with Roasted Vegetables
Baby Spinach
Lentils cooked in garlic (option to add extra seasoning)
Roasted Eggplant
Roasted Carrots
Sliced Red Bell Pepper
Dressing: mix hummus with a squeeze of lemon juice and water
*Snack: apple w/ PB
LUNCH 2 - Pesto Tempeh Sandwiches
1 flatbread cut in half (or use regular sourdough)
1/2 package tempeh, sliced
2 tbsp pesto
Baby spinach
Sliced Red Bell Pepper
*Snack: Carrots & leftover hummus
DINNER 1 - Bean & "Risoni" Bowls
1/3 of cooked bean & risoni mixture
Roasted Broccoli
Roasted Tomatoes
Optional: squeeze of lemon and/or drizzle of oil
DINNER 2 - Broccoli Pesto Pasta
Cooked Lentil Spaghetti
1/4 package Kale Pesto
Sliced Broccoli Stems - add to pasta water to cook

Walmart would be very interesting to see because it would definitely be more budget friendly but less vegan friendly
And there are Walmarts all over the country unlike some of the other stores she mentioned
I only have a Walmart where I am, so that would be great!
Walmart (at least the ones in my area) has been stepping their vegan friendly game up! I can find vegan chocolate chips, beans, daal, lentil pasta, fruits/veggies, tofu, and meat substitutes like gardein. The smuckers giant PB is only like 4 dollars there so if you're not allergic to nuts get that one. They have other nut butters too and cookie butter if you're a sweets person. They don't have a great variety on vegan dairy substitutes i.e. milks, cheeses, or yogurts YET but if you're cool with almond milk or soy from Silk you can find it there. They have large rolled oats containers there too BUT it's not as cheap as other places. You can basically replicate Caitlin's meal prep shop at walmart just subbing a plain olive oil and other hummus brand (it you can't find tempeh they usually have tofurky slices too). A great bread from Walmart is the thin sliced multi seeded whole grain bread great value brand. Oh and nuts/seeds are usually cheaper here too!
I live in NYC and don't have a Walmart. The funny thing is that it is more cheaper to go to the NJ one as opposed to the Long Island one. We have Aldi but in those transportation desert areas. I can't go there and carry a lot out. I might do a trip to see what they are like price wise with an audiobook playing and not a desperate need to do food shopping. I do have loads of Trader Joe's by transportation.
I think Walmart would be good but so would a grocery store like Kroger or Safeway or whatever the sort of standard grocery store in her area is. I also wish some of these videos would consult ads before they go. People who are really on a budget shop ads and make their dollar stretch a long way. I think it would do a great service to her audience by showing that this is the way to shop on a budget not just walking through and picking up random stuff for an hr and it being stressful. Shopping with intention is a great skill to have!

Try doing a budget shop at Whole Foods! I feel like it can be "whole paycheck" or it can be relatively affordable if you buy store brand, shop sales, etc. I would be interested to see what you come up with :)

In Polish Aldis we have some products branded Trader's Joe, for example vegan tortillas and nuts :)

My vote is for Target! They now have a pretty good grocery section, and it would be nice to get all of my shopping done at one place
produce at Target where i live is limited to say the least

Only suggestion I’d love is if you throw up some notices in the beginning of the video on the shelf life of these items bc some people are busy / traveling for work / short on time in the evening etc.

Love the cheap recipes! I’m on a budget so I love seeing this content. So many vegan recipe videos involve lots of expensive or hard to find ingredients, or long list of ingredients and it’s just not relatable. Thanks for this content!

I think here in the US almost everybody has access to a Walmart. I live in a rural area and the nearest Trader Joe’s is 5 hours away and Walmart is 30 minutes.

Thanks so much for making this! I always shop at Trader Joe’s and actually aim to spend $50 or less each week, so this was perfect for me. I vote for another Trader Joe’s video and a Walmart one could be super interesting.
My favorite take away was roasting all the vegetables for the week at the same time. Big time saver!

Added my vote below, just wanted to say thank you for sharing the pepper cutting tip. I got a deal on a bunch of peppers and need to cut them up to freeze and portion out so I will definitely be using that tip!
Awesome video! Those chocolate bars are so good. I also love their mini dark ones bc they are individually wrapped for on the go. The lentils are actually really flavorful on their own and are pretty good cold. I vote for Sprouts as the next haul.

I shop at Trader Joe’s every week for our groceries and it was so cool seeing you choose a lot of the same items! I used the risoni with white beans, broccoli, and the pesto! It was delicious. It was so cool to see all of your thinking.

I'm all about easy & efficient in the kitchen, without sacrificing nutrition and deliciousness :) I'm more comfortable with closer to paleo style cooking, but my husband prefers to eat plant-based, so I'm branching out! Just made all of this, it was $28 because i had a few items at home, but this was super easy and fun to make. my favorite is the pesto sandwich (i used tofu instead). the hummus and lemon dressing is such a great idea too! Excited for this week thank you for this video :)

That is a really great idea, using brocolli stems with pasta, I've always wondered what I could do to avoid wasting the stems, I usually compost them but this is a great way to not miss out on all the nutrients! Thank you!
You made your comment ages ago so you may not see this, but I finely dice the stems and chuck them in a vegetable stir fry, then taste so good! :D You can also use them in juice if you're making vegetable juice :)
You can also use them with other veggie “unwanted” (like the parts of onions or celery that you don’t use) to make vegetable broth!

love this style of video ...i meal prep every week ... not full meals just things to help make life easier n ive never thought of 2 different veg options for dinner n tea ...seems silly but its true that's genius as i usually prep n eat same veg but a variety...as the more colours the better so definitely using this as gets a little samey ...THANKS ...glad your doin this style once a month ...😊😊

Great prep! May I recommend salting the eggplant and letting it rest/drain before you roast it? It helps get rid of any bitterness!
