I got mine through iCloud. Do you know how I can setup an email signature separate from that that's already in iCloud?

If you have multiple email addresses on your device, you can go to the mail settings on an iOS or iPadOS device (Settings --> Mail --> Signature) and set it there.
If you only have a single account/email, you only have the option for a single signature. At that point you may need to look into other email apps that allow you to have that.

I adctivated a domain on cloudflare but it's not detecting cloudflare on google workspace...what can I do😅

If it doesn't recognize the domain being on Cloudflare, you may have to manually set the DNS records. My video linked below walks through how to manually set records in Cloudflare; just ignore that I'm talking about setting up Gmailify instead of Google Workspace.
