The combat has always been the same with trails, each installment is just making improvements on it, Kuro No Kiseki is the first trails game to implement both a turn base system combat and a action system combat, if Story I would recommend Zero No Kiseki and Ao No Kiseki but their official localizations would come out at 2022 and 2023 so I guess if you want to get the feel of Trails I recommend Cold Steel 1 and 2, then before moving to Cold Steel 3 I recommend to play Sky next as the previous entries will connect with Cold Steel's storyline plus it would make you appreciate Cold Steel 3 and 4 more
Short answer is: Play games from release order, because all games required you to understand a cohesive narrative and each sequels to others will inevitably reference past games that treat players like they already know them.
