100% agree with all of this, especially the God shot part. I remember early on in my home espresso journey, I was trying to dial in my recipes for different roast levels and such when I accidentally pulled one of the tastiest shots in my memory. In reality, it probably wasn't the best shot I have ever pulled, but I wasn't expecting it at that time so it really blew my mind: a medium/light roast single origin from Brazil that tasted like deliciously sweet peanut butter. For the next month, I can't tell you how many beans I wasted trying to identically match that "God shot" and how disappointed I was when the majority of shots I pulled fell short of that initial God shot.
Since then, I've learned to only control what I can control and try to maximize consistency over everything else.
I had a similar experience when a new roaster opened in my hometown several years ago. I loved the flavor profile of their espresso and wanted everything to taste like that for a while.
