    you may be scratching your teflon with that type of spoon. try a silicone spatula. it handles the hot sugar so don't worry about it burning, plus, it scrapes off the extras wayy better then a metal spoon can.Thank you for the recipe!!, it was really cool to watch!!

    Every year My friend & I made crystalized ginger. Last year pandemic 😷 we missed making it.
    Now too high cost of ginger, this film an ideal ways of enjoy 😊 candy ginger.

    100g, 3.5 oz, or 1 cup - ginger
    250g, 8.8 oz, or 1.5 cup - sugar
    118.29g, 4.17 oz, or 0.5 cup - water
    Pinch of salt
    0.5g, 0.018 oz, 1/4 tsp (pinch) - Cardamom ground/power
    3 (2+1) Tblspn - flour
    Here is what I gathered from the video. Not sure if the ginger quantity is before it is peeled and chopped or after. I went with the latter. Unfortunately, there aren’t any cooking times, however part of the process is to boil down to thicken the recipe, so I would imagine that the cooking time is at least 15-30 minutes. Ingredient amount are approximate.
    Peel the ginger and grate it or chop in a food processor.
    Combine sugar and water and bring to a boil while stirring.
    Add pinch of salt and bring to boil again.
    Add ginger, stir well and bring to a boil.
    Add Cardamom, stir well. Boil.
    Add 2 Tablespoons flour, bring to boil and add 1 more tablespoon, boil and stir until the mixture thickens.
    Pour into silicone mold, butter paper (search CZcams for instructions to make butter paper), aluminum foil, or parchment lined form. (Something that will release and not stick to the candy). I didn’t want to use flour, so I substituted cornstarch in half the amount. Also, substituted a bit of the sugar for brown sugar. Recommend putting a dish in the freezer to put a dab of the mixture for fast cooling to check the firmness. Waited until it was cool enough to handle and sliced it into small bite size pieces. Yummy eaten straight. Next, I might try dissolving it in water with lemon and have a ginger lemonade!
    UPDATE: Since I added a little bit extra cornstarch, they came out pretty firm... next step was to dip them in melted chocolate and let them cool. SOooooo yummy!! Lined a small bread pan, so that I could lift out and cut into small squares for dipping in chocolate.

    I search with google translate ginger candy recipe (in chinese language) and it's not that easy to find de receipe with the right proportion of ginger, maltose, sugar and rice flour. This seems a good adaptation of the original receipe (where hell can I find maltose ? luckely I found glutinuous rice flour) , Thanks, I'll try tonight without maltose and let you know how it is

    Soooo, this is cinnamon ginger candy. Why use flour. What would happen if you kept cooking without it. It would turn into a ginger hard candy, wouldn't it?

      Mahlimi Sailo I use it to fight off illnesses and keep me healthy. I have COPD and use it whenever I get sick or am coming down with something. It definitely knocks colds, flu, and sinus infections down! Also gives me energy. My boyfriend and I both had the flu last winter. I took ginger, he didn’t. I got over mine in 3-4 days. His dragged on for over a week and ended up in antibiotics for a sinus infection. He rarely gets sick, and I pick up everything. I would definitely recommend trying it.
