Please try this and you won’t make your butter sauce any other way I PROMISE you. I learned this from my Cambodian father. In a small sauce bowl add a piece of garlic smash it one with the flat part of a knife do the same to a ginger chunk then add a big scoop of butter add some lime a little salt and a little black pepper if desired and microwave it. It infuses all the flavors together it’s so AMAZING! I pour that on my rice and everything. You can eat it with lobster and fish anything .

The lungs are called the devil in Maryland cause everyone says it makes you sick. It doesn’t really make you sick unless you are a texture person. It just tastes god awful. Rumor has it that a lot of places will dry it and grind it to make a powder for crab stock. We also refer to the yellow as the mustard, but it’s up for debate here. Some love it, some hate it. I don’t particularly mind a bit of it, I just hate when the inside of the crab is totally coated in it. I really love seeing all the commonalities (& differences) in food across locations and cultures. Food is one of the most creative human outlets and we take it for granted. I love experiencing it even more than I like learning about it! 🤤💜
