Mauritian Butter Bean Daube (La Daube Gros Poid)

  • Ingredients:
    1 Can of Butter Beans (400g)
    1 Onion
    2 Green Chillies (optional)
    Few Sprigs of Fresh thyme
    1 Tbsp Garlic and Ginger Paste
    2 Tbsp Chopped Canned Tomatoes
    ¼ Tsp Fenugreek Seeds
    ¼ Tsp Fennel Seeds
    1 Tsp Coriander Seed Powder
    1 Tsp Cumin Seed Powder
    3 Medium Potatoes
    1 Tbsp Vegetable Oil
    Some Fresh Coriander for Garnishing
    Salt to taste
    Method:
    Open the butter bean can and drain the liquid from it.
    Thinly slice the onion. Slit the chillies lengthwise and cut into small pieces.
    Peel the potatoes and cut them into small squares.
    Roughly chop the fresh coriander.
    Heat oil in a pressure cooker or saucepan on medium heat.
    Add in the fenugreek and fennels seeds, saute for 20 seconds.
    Then add in the onions and fry until onions are translucent. Should take about 2 minutes.
    Add in the ginger garlic paste, thyme and green chillies. Stir fry for a minute.
    Then add in the cumin and coriander powder. Saute for about 20 seconds.
    Next you add in the potatoes and mix well with the spices.
    Followed by the butter beans. Mix Well.
    Then add in the tomatoes and mix.
    Season with salt and cover the mixture with water.
    Cooking method:
    *Using a pressure cooker: Place the cover of the pressure cooker and let it cook on medium heat for 3 whistles. Remove from heat and allow the pressure to release for 8-10 minutes. Then open the cover.
    *Using a pan: Lower the heat to avoid the bottom from burning and simmer for about 20 minutes. You have to stir it 2-3 times in between and add in a bit more water if the mixture becomes a bit dry. It’s cooked when the potatoes are soft.
    Little Tip: To thicken the daube, crush a few pieces of the cooked potatoes using the back of your spoon against the side of your pan and stir it back in the sauce.
    Sprinkle with the fresh coriander and serve hot with some basmati rice.

    I've looked for this recipe for ages. I made it and it was exactly how I remember it from childhood.
    Used pima sec instead. Can you make curried butter beans pls?
