Scott, is not only a very good butcher, but he's also very good at explaining of what to do with anytype of his cooking methods.
I"m making a note right now to give my butcher a call tomorrow. Haha. Many thanks, Scott.
Thanks Scott! Man, you are a beast with that knife. My uncle was a butcher for over 30 years and when I was a kid I loved watching him cut steaks and make hamburgers the old fashioned way. Thanks for your videos and all of your knowledge you share!! Many Blessings!!
thanks Jason.much appreciated my friend. many thanks. . scott
Scott, you need to show cooking it and eating some, that is a greatest part of the whole thing.
Mike
Michael Andersen HI mike,i guess it was a bit of a tease,i normally do,but thought i would leave it up to your imagination, may show it in another video some time, all the best..Scott
Scott found the donation site. hope it helps
Just did this while the kids where out, worked pretty well but discovered two things. My knives aren't as sharp as I'd like and I need to practice tying knots. Thanks for the fun videos.
Looks good scott. I do them in our shop too but slightly different. I just use 1 string using the twisting method. After you tighten off each string twist the string then turn your roast on the 45 degree angle. After you've done your 4 sides tie off the knot and all done. Saves dicking around cutting each knot and you don't need a needle. Each string can still be cut while the others stay in place....
Beautiful! I'd love to see it cooked.
Thanks for sharing
Never seen that before lad, awesome, ill give it a go.
Looks really good Scott
I bet that will taste delicious. I buy a full one every year. I think I will be given this a try. Great job thanks for sharing. Cheers

That's beautiful. We don't eat much lamb but I'll be trying that with venison next hunting season with some of our own pork stuffing and maybe wrapping it in caul fat before I tie it up.
Scott - you genius! Could be lining this up for Sunday. Wish I could do those knots that quickly!! Must practice more :-)
Hi Nigel, this might help my friend, its just practice practice practice.all the best..Scott

What a cool idea! I've got a venison shoulder on hand so I will see if I can convert it into a cushion. Maybe I'll use some bacon as "upholstery" so that it will cook better. You totally blue balled us on the finial product. I really hope next week's video is you cooking it! Cheers
oh man.maybe I will mate?.i wanted to do this with venison,(but you have to be super carefull you don't cut through that outer skin)but the deers I had were not meaty enough.cause this would be great with venison.let me know how you get on Bro. many thanks. . scott

I'm not a big fan of lamb Scott but I will be trying that with a fallow deer shoulder, looks the business:-)
Nice Parcel, can you send it to Boston for me?
That was the coolest thing in the Culinary World that I have ever seen Scott. I am very impressed!
Damn you Scott, you make it look so easy - I guess that's what comes from years in the trade :-) As ever, a joy to watch a master craftsman at work. The knives you use, though - wow, they are something else. The way they cut through that joint is just amazing.
Thanks for yet another amazing video - I'm totally hooked on all your stuff, please keep up the good work !
Scott, when you cinch your butcher knots down so tight, doesn't that squeeze all of the meat juices out as it's cooking? You're brilliant and thanks for doing the videos
that little peace of meat on the side kept bugging me hahahaha i started to bet if u going to cut it off or not hah awesome
I made one of those needles to use here

Danijela Minic I use Rayon butchers Twine, which you can get easily on the net Danijela, many thanks..Scott
Danijela Minic Marty climbing rope
Watching you butcher meat is like watching Bob Ross paint. He would have said "here we have a happy little shoulder of lamb."
any knife brand u like
Not showing it cooked?
scott are you sure your not really alexes sall
no Dave . but I could do with his money and....sense of humour....all the best mate. . scott
Looks like you were holding that knife very dangerously to remove the bones.
It's precision cutting Adam.ive been doing it a long long time,it looks worse cause it was close up.but it was as safe as can be.26 years in the trade and I have cut myself 3 times only.so not a bad safety record . believe me, I know what I'm doing. .many thanks. .scott
ehmm, great dish, just that 45 looked a lot like a 90...
thats 90 degrees - not 45
there's always one...congratulations it's you..
No theres another further up.
Nope, first turn was 90 degrees. We would be well lost if you were a navigator.
your not going too cook it...
