    Thanks Scott! Man, you are a beast with that knife. My uncle was a butcher for over 30 years and when I was a kid I loved watching him cut steaks and make hamburgers the old fashioned way. Thanks for your videos and all of your knowledge you share!! Many Blessings!!

    Just did this while the kids where out, worked pretty well but discovered two things. My knives aren't as sharp as I'd like and I need to practice tying knots. Thanks for the fun videos.

    Looks good scott. I do them in our shop too but slightly different. I just use 1 string using the twisting method. After you tighten off each string twist the string then turn your roast on the 45 degree angle. After you've done your 4 sides tie off the knot and all done. Saves dicking around cutting each knot and you don't need a needle. Each string can still be cut while the others stay in place....

    That's beautiful. We don't eat much lamb but I'll be trying that with venison next hunting season with some of our own pork stuffing and maybe wrapping it in caul fat before I tie it up.

    What a cool idea! I've got a venison shoulder on hand so I will see if I can convert it into a cushion. Maybe I'll use some bacon as "upholstery" so that it will cook better. You totally blue balled us on the finial product. I really hope next week's video is you cooking it! Cheers

      oh man.maybe I will mate?.i wanted to do this with venison,(but you have to be super carefull you don't cut through that outer skin)but the deers I had were not meaty enough.cause this would be great with venison.let me know how you get on Bro. many thanks. . scott

    that is superp scott going shopping today for that cut of meat and do what you did. prob wont come out the same but half the fun is trying, and I did the whole turkey the other day. had your video on and kept pausing it till I de boned it step by step lol, came out lovely though. your vids are great and people learn so much from them. cheers

    Damn you Scott, you make it look so easy - I guess that's what comes from years in the trade :-) As ever, a joy to watch a master craftsman at work. The knives you use, though - wow, they are something else. The way they cut through that joint is just amazing.

      It's precision cutting Adam.ive been doing it a long long time,it looks worse cause it was close up.but it was as safe as can be.26 years in the trade and I have cut myself 3 times only.so not a bad safety record . believe me, I know what I'm doing. .many thanks. .scott
