So, alchemists can manipulate any material. They just need to fully understand it's composition and have the correct formula on their transmutation circles. That's why most alchemists specialize in a specific type of alchemy and have some sort of equipment, so they can always have a transmutation circle ready. So Ed is special in that sense because, since he doesn't need transmutation circles, he doesn't have to take the time to prepare one with the appropriate formula.
And yes, we have seen Al doing alchemy very before this. In fact it happened on the very first episode.

Think of it like a chemist when they're making something - you need to know the exact formulas of what you're mixing together to know what you're going to make. Same principle really. The pre made transmutation circles that other alchemists have are essentially like study cheat sheets so they can know what they're doing without having to write the whole equation down every time, and it also acts as a magic focus for the power. Ed doesn't need to do that because he saw the Truth and has knowledge of how the world works downloaded into his brain.

This is really inside baseball, but you asked... So, Rush Valley saw a huge boom immediately *after* the Ishvalan war due to the number of veterans (and civilians caught up in the conflict) who has lost limbs during the fighting. The presence of high quality ore in the region made it perfect for opening these types of businesses. You could argue that the town profits off of war injuries, but that's a little too heavy handed.

Mustache man on the wanted poster has been seen before. In episode 4, when Ed and Al visit Mustang, one of his men is talking about wanted posters. He say that the mustache man is Lt Yoki, a corrupt tax collector who was embezzling from the government and who was exposed by the Elric brothers as one of their earliest missions. So definitely a background feature you may have seen before, but weren't expected to notice or remember.

A little thing they cut out is that is Dominic apparently has a history with Granny Pinako. When Winry mentioned her last name he went white as a sheet and referred to Pinako as the "pantheress of Resembool" xD
So, part of why they had to deliver the baby themselves is cause the storm knocked out the bridge, meaning Dominic would have to take the long way around to the village to get the doc, who wouldn't get there in time. In the manga Ed does try to use alchemy to build one but, the bridge kept collapsing under its own weight (it was just a chunk of earth sticking out of the side of of the canyon wall with no supports) and the raging river meant they couldn't make supports cause they'd get washed away.
Re: the wanted posters, one is Scar, one is someone you haven't met yet (not Kimblee, he's already in jail) and one is a minor antag from a cut story that would have happened just after the Liore events. He was briefly mentioned iirc by one of Mustang's men (his name is Yoki). He is not overly important at the moment.

One of the advantages the 2003 original has over the Brotherhood more faithful to the completed manga is showing much the Elric Brothers loved the Hughes family.
Ed and Al were there for the birth of Hughes daughter and Ed while freaking out she's gone into labor and he has to help do something does his first transmutation without a circle. Like that's how Ed learns he can do transmutation without a circle, panicking boy trying to help woman going into labor.

For more context of Rush Valley & how an uncanny number of citizens require prosthetics, there is an important detail within the Manga. Most of the citizens of Rush Valley are survivors of the Ishvalan Civil War, which we were told the revolt had spread throughout the entire eastern sector of Amestris. Even Resembool (Ed & Al's hometown) had suffered from a few attacks during the war. Thus, the large amount of people in need of the prosthetics.

@@SGC51I sooooo disagree. This episode is very important in reinforcing the value of human life and the limits of alchemy. Alchemy is incapable of creating new people from nothing, but people just by being human can accomplish it. This theme comes up later, especially towards the very end of the show, IYKYK. It’s also an extremely important episode for developing winry as a character, and is also plot relevant considering that her being in rush valley and improving is brought up later. The whole pocketwatch subplot also shows eds resolve and remorse over the day he brought his mom back. Of course we already know this, but seeing it again is important. Also, this is the start of the character arc around winrys tears that gets incorporated later. So much important setup in this episode that becomes relevant for the thematic analysis of the show as a whole. Just because this episode isn’t directly related to the philosophers stone or the sins doesn’t make it “filler”, it’s just a lighthearted reprieve on their journey.

Paninya also explains that the reason for her extravagant automail upgrades that Dominic won't accept her paying for her original prosthetics so she tries to purchase these upgrades to pay him back, but he still won't take her money because she steals for it. Finally, the scene just before the birth is a bit longer with the bridge outside the home being broken and Ed being unable to create one with alchemy so Dominic has to take the long way to retrieve a doctor. What FMA does really well is make your care for these characters, because they all have their own struggles, pain and loss of some kind in their life that changed them forever, and in part that was all to do with the Ishvalan War.And of course we all know what war does to people.
Being exposed to Truth in the beginning filled Ed's head with all this knowledge, too much knowledge for one person to handle all at once. I forget specifics of what makes him special though being exposed to all of that, but it probably has to do with origins of alchemy and the world. But also has the ability to allow him do alchemy without a circle.

I think what they tried to do with FMA is give it a way darker, way more """mature""" feeling which just translated to doom and gloom. Even the movie ending is black pilled as hell. And the main villain - the short black haired chick - not even half of a half as compelling as FMAB's main antagonist.
TL;DR: FMAB is what you get when a creative person (original writer) does the series. FMA is what you get when a committee tries to copy said creator's talent.

It has been a long time since I saw the original FMA, so don't take this as gospel, but I 'think' in the original, the Mayes Hues death comes in season 2 or 3, so we got more time with him. The Tucker story also spanned a few episodes instead of just one. FMA:B is definitely better suited for reaction viewing, but the original is worth a watch on your own time. They share a few story beats, like Tucker and this episode, but the overall plot is different... and you get more Armstrong... who sadly is going to get sort of side-lined shortly.
