Part Three!
I had to work through those zucchinis I bought, I am grateful for the cooler weather, it does mean that a lot of the fruit and veg stays at peak condition for longer without refrigeration and gives me just that little bit of extra time to get onto them!

Yes I like the cutter with my thermomix I had a Lebanese neighbour who told me how to make zucchini fritter by adding shallots mint and parsley as well.
I've never had Zucchini Fritters, but yours sure look tasty. I don't know how you come up with all the food ideas because I could never even imagine doing what you do. Thanks for sharing Nyssa!
The chocolate zuccini loaves looked lovely. Have tried making cakes with zuccini and beetroot before and they came out lovely and moist.
It's great for the texture isn't it, its not a 'light' cake/bread it definitely has a denseness to it, but its a pleasant dense/sweet/moistness.

Thanks for the zucchini ideas! I also think I’ll start making more veggie fritters just to use up random veg. I generally only make corn fritters (and okonomiyaki) but you have helped me realize that the possibilities are endless! 😂

I use zucchini in brownies; so good and i’m not really a brownie person. I also dehydrate and add to many different dishes for added nutrition.
Won’t it be exciting to get more done on the house? It’s such a disrupter but so satisfying when it’s done. (Especially if you’re still speaking to your spouse when it’s done. 😅)
I really want to try dehydrating it at some point, a lot of people use the flour, we just don't have the power to run the dehydrator for it atm, but one day! :D
It will be fantastic to get the kitchen sorted, but just urgh in the moment, yes lol :D

One of our favorite sweet treats with zucchini is a spice cookie with shredded zucchini. I'm with you on adding zucchini to many things I am cooking as it takes on the flavor of what is made. Today we picked a zucchini that we shared with our chickens; how is it you can miss that great big zucchini when they are picked every day.🤔 Oh well the chickens did not complain.
It always amazes me, out there pruning and picking and still find ones as big as my forearm on occasion!

Hehe, that's Whistles, who is the duck we saved and hand reared, he comes to say hello like that! He's the one that Apollo is bathing in one of the shorts, super friendly, though at the same time, in his friendliness he can nip and break skin!
My son eats a lot of different left overs cold. I definitely think it’s weird. 😂😂
I can't figure out if they actually enjoy it, or are just too lazy to reheat it! lol, especially seeing as we don't have a microwave!

I'm glad, that's mostly my aim, I liken it to flicking through one of the recipe magazines, not necessarily going to use something word for word, but I get ideas! :D
Those Coles Udon noodles are so so good. I use everything you do but add peanut butter for a mild satay flavour. It's amazing and a cheap feed when l want to use up veggies and not cook soup.
I love that they're shelf stable, so I can have a stash of them and use them when I have stuff to do so or not, they make an easy lunch sometimes too

Oh my. Been super busy as well , looking after grandson 3 days in a row.... pooped tonight just sat down to watch you... you have taken me back to my childhood ( mums zuchinni loaf and fritters) but we had the fritters with left over lamb made with a batter) Sunday night after Roast lamb...& left over veg bake up... my Mum used every part of everything, just like you do...
I cannot tell my children if it's half a cup or whatever because I just guess... ... loves Daryl's wavering had suggesting here it is... ..

When zucchini’s are not in season I use tinned corn to extend the batter. I’ve also used sweet potato to bulk it as well instead of corn.
We love corn fritters! I use sweet potato in my zucchini slice with the slightly longer cook time but I haven’t tried it in fritters

The chocolate zucchini bread looked lovely! How do you serve it? Do you ice it or butter it? Good to see Daryl working his magic!
We just serve it as slices, its dense and moist enough to not need anything, and my kids are used to me serving things without icing etc lol, icing is always a bit of a treat!

It works really well, keeps it very moist and dense all the extra veggie matter, but super tasty!

September is officially spring, but we get frosts through September as well, so things like planting out frost sensitive plants I wait until end of September :)

Chocolate zucchini bread is great to hide the green bits from family members who « don’t like » zucchini. Yet they hoover the bread (or muffins) down 😅. Also add grated zucchini to spaghetti sauce and homemade soups

It all looks delicious as always--does the zucchini come out of the freezer soupy or soggy? Love Darryl's game show hand flourish!
If you let it defrost, it definitely goes soggy, but I find that for my usage, like putting it into a soup or a mince based dish etc, it adds texture and flavour without causing any gross texture issues. If I want to use it in a bread/fritter etc, I hold back some of the liquid component and mix it through, jic it doesn't need the whole lot, but it holds texture fairly well in batter.
