    I tried Dr Fuhrman's way of eating back in 2003. It was the best I have ever felt. Sadly, I drifted back into poor eating because I live with a fast-food carnivore. Now I have diabetes (controlled with diet) and gall bladder trouble. That carnivore can fend for himself from now on because I'm going back to health. Thanks so much for calling my attention to this interview from your short on Adventist eating and how healthy they are. I needed this push and I'm grateful, Simon. Many blessings to you and yours.

      My grandfather, although not a Seventh Day Adventist, was raised as one, and continued to eat as he was taught his entire life. He always had a vegetable garden growing and always came back from the markets carrying large boxes of fruits and vegetables. He was also a raging alcoholic until his 70s, when he was diagnosed with prostate cancer, and the medication used for that (presumably morpheine) worked for him in replacing the alcohol. He lived to 96yo and died from the effects of a stroke while replacing my aunt's back steps. He didn't have a wrinkle on his face, and had most of his hair, and was always (as far back as I remember) very strong.
      I highly doubt he'd have lived that long had it not been for his diet.

    I remember a few years back when the low fat side of the vegan influencers and doctors were vilifying dr.Furhman for his higer fat approach. How the tides have shifted… He was on the right side of the nutrition spectrum all along.

      I agree, with the caveat that his approach is probably lower in fat than the SAD diet.

    I used to binge eat a year ago, but all those cravings have disappeared on a nutrient-dense diet. In fact, I don't crave any unhealthy foods anymore. And I have maintained a healthy weight with ease. It's taken a year and 6 months to get to reverse my food addiction. I will never go back. I totally agree with this episode. Thank you for the affirmation.

    One of my favorite daily things to do while I'm doing housework is listen to podcasts and lectures on health and diet and exercise. Of all the doctors and information spreaders, I still believe Dr Joel fuhrman is the king of nutrition. I do disagree with him a little bit on a small amount of organic oil daily is okay, I guess it's from being Italian lol, but other than that I really agree with just about everything he has to say nutrition-wise. It's really just massive common sense.❤

    Thank you Simon. I initially did not want to like Dr. Furhman’s ETL plan because I wanted what I wanted. However, there was never one minute where I ever doubted his knowledge or sincerity!!! I have now been eating ETL for two out of my 10 WFPB years with the best results!!!!
    I love Dr. Fuhrman and am so grateful to him.
    I also love the way you respectfully bring the other side of a question to the table. You are never offensive, so well prepared and sincere as well. Thank you for all you do!!

    Dr. Fuhrman reminds me of my Biochemical professor. He is very knowledgeable, and he is very intelligent. His brain is so quick to deduce information through his research and learning. He becomes frustrated as he probably feels like he has been repeating himself for years. He probably can't understand people who have the information but still remain ignorant.

    Dr. Fuhrman is like that high school teacher---NOT the warm fuzzy one you could always talk to, but the strict one who accepted no BS and demanded your best. There were icy vibes at the beginning of the interview, but, as always Simon, you did a masterful job of asking the right questions, getting clarification, and summarizing for your audience. I know some of the original power vegan docs have fallen out of favor, but I am glad you had him as a guest; I always learn something from him.

      Keep in mind Dr. Fuhrman is still actively seeing patients almost daily. The majority of his patients are very sick and possibly near death and not just trying to lower cholesterol, balance blood sugar, or even trying to get larger muscles and a six pack…hence…laser focus on nutritional excellence!

      Simon started out saying he didn't agree with everything Dr. Fhurman said. He's a physician who has been WFPB for 60 years. I don't know what Simon's background is, but I doubt he has this degree of education or experience. To make a comment like that given in the context Simon said it, could be a bit insulting. Dr. Fhurman said he has reviewed over 30,000 articles. That says a lot!

      @@kh485 Yes, but I wield WFPB + Nutritarian + SOS-free for placebo. They are not grounded in strong evidence at all. In other words, you do not need to be that pure at all in your diet. It's gospel essentially lol. And for me I like to hear it because it makes healthy eating sound much less boring and borders on magical because of all the possible mechanisms, newly discovered phytonutrients they all preach about etc.
      TL;DR: If you want healthy eating to be as sexy as possible, this is where it's at. But you don't actually need it for good health. I just know that even if there is this 200 calories per day where you can fill it up with whatever junk and not affect your health, I know I will over exceed it and it will tempt me to always crave junk.
      Why not go all in and make healthy eating magical? That's my take.

      ​@@kh485Absolutely! There are hundreds of CZcams channels that agree with what he says. You have to listen to a lot of information & sort it out for yourself. However, the current, valid data based research certainly leans toward what Dr. Fhurman advocates.

    Amazing interview. Dr. Fuhrman has an amazing knowledge of nutritional science. I found Eat to Live in the library 10 years ago and it radically transformed my life. I lost 60+ pounds, reversed high blood pressure, high cholesterol, pre-diabetes and mood issues. All the benefits have lasted! I have all his books and recommend them all- including the cookbooks. Honestly, they are a treasure trove of life enhancing information. Thank you, Dr. Fuhrman. What a good person. I’m 63 now and active as a runner. I feel this lifestyle enhances my creativity as a musician as well. It’s hard to explain- you have to experience it.

      What he forgot to tell you is if you spend a lifetime eating too many plant foods you will have to spend more time chewing and chewing and this could wear out your TMJ prematurely and what type of doctor will fix that? Dr. Fuhrman, nope, a Dentist, nope, an ENT, nope, an Orthopedist, nope. You want to consume the most nutrient dense foods with the least amount of chewing. Remember these doctors are looking for repeat customers to keep you ill.

      Then propose the study of total TMJ replacement in nutritarians. Haven’t seen trends in TMJ degeneration from Fuhrman’s approach-also, orthos do not perform TMJ procedures. Nibble on.

      @@freeian2 And how many years have you been doing a nutritarian diet for? I said if you spend a lifetime starting young. There is no such thing as a nutritarin diet it is a made up word and not accredited by anything except the salesman selling debunked books to the gullible. Fuhrman has a book in my library that said broccoli has more protein than steak, but this is 100% wrong in calories or grams, the rest of the book is all errors.

    I'm usually skeptical of no-oil plant-based diets, but Dr. Fuhrman's explanation makes sense to me. If the overall amount of calories per day is limited then added oil will start taking up too much of a portion of the diet while being low in nutrients. I get it!

      It makes so much sense doesn't it. I think it is much easier to get fats from whole foods and it comes with fiber and nutrients. So getting PUFAS and MUFAS from whole foods is by far much more helpful than liquid oil whether that liquid oil is straight out of a bottle or from a processed food.
      Fuhrman doesn't get enough credit. He is incredibly thorough with his thinking on this and his research is extensive.

      @@TheProofWithSimonHill Hey Simon, Dr Furman recommends 250 mg of EPA DHA but Dr Harris recommends a thousand or 1,500 in order to bring levels up from four or five to eight. What are your thoughts on this?

    Dr. Fuhrman has always been, and still is, my favorite plant based doctor and expert. I love how he said in the beginning people need to make sure to eat a lot and eat satiating whole plant foods to succeed in this WOE. To that end, I used to love green smoothies, but they really did a number on my insulin levels when I made them with fruit. And they didn't sustain me. I recently starting putting 1-2 tsp of psyllium powder in them for the soluble fiber benefits and amazingly it totally transformed the smoothie experience for me, making me feel full for hours! This is a glorious revelation for me. And the soluble fiber is so important for hormone balance and liver detox. Win win win!

    So glad this conversation happened. Dr.Furhman's advice was what resonated with me the most when I first went vegan. I favoured his approach toward focusing on nutrient dense foods with particular attention to healthy fats and protein as apposed to the HCLF community which was popular at that time 😴

    So much to like about this episode. Simon is a skilled interviewer including asking tough questions without being rude, and being a good listener. Dr. Furhman seems so knowledgeable, with great communication and teaching skills. I especially liked that on some points he is willing to say “i don’t know” or “probably” and at other points he is certain and gives the specific research that backs up his views.

    Dr. Fuhrman,with your books you have changed the way used to see the food. My most recent cardio stress test on treadmill was excellent. I brought my heart rate to 148 with no problems, You saved my life.

    I've been a vegetarian for most of my life for ethical reasons. Now I would like to optimize my plant-based diet hoping that I find a way to do so in the part of the world where I'm living. As a first step, I'm going to order Dr Fuhrman's book.

If anyone haven’t read the book The Pleasure Trap: Mastering the Force that Undermines Health & Happiness by Alan Goldhamer and Douglas J. Lisle, I highly recommend.     I am glad I finnaly found somebody who has more moderate approach towards recent hype (I'd say fueled mainly by P. Attia) of "max out protein (from any sources) and max out muscle mass, otherwise you will die".

    Thank you to Dr Fuhrman for educating about zinc.
    After going through a stressful few months that probably depleted my zinc levels, as I was feeling great before that, I had insomnia on and off for 2 years, that I thought was because of the stressful period still, I read that zinc is a risk nutrient and it clicked in my head that maybe it's actually my diet.
    I went to get tested, was diagnosed zinc deficient, and after a few weeks of taking a high dose of zinc, I was sleeping normally again.

    Fuhrman has influenced my dietary choices a lot. I think he offers a very comprehensive dietary programme, although he does have his issues.
    I don't necessarily agree with some of the hyperbolic language he uses about some animal foods and oils, for example.
    I think he's certainly worth listening to having said all that. Thanks for the interview!

    Thank you for another interesting and informative podcast Simon. Having worked with Whole Foods Market, I have followed Dr. Fuhrman for years, given his book placement/publicity in stores. His no-nonsense approach to nutrition is still revolutionary, and your interview style to clarify truth vs. myth gave listeners, as always, important information to consider.     I was overweight, 200 lbs, in 2011 in spite of going to the gym and exercising. After I purchased his book and followed his diet and within 2 months my weight dropped to 150 lbs. It's been over 12 years and I'm now at 136 lbs. His diet really works! If you want to be slim, fit, and healthy, just follow his advice.

      I honestly considered Fuhrman to be a quack, but hearing how he responded to Simon's pushback makes me consider taking him off my quack list.
      He is not off the hook yet, though. A lot of his statements related to biochemistry seem strange to me, so I wish he would stick to that hard human outcome data.

It really helped me to understand better as to what I've tried (to be healthy) and what I need to do now with my overall dietary intake at age 73 (and battling some serious issues)!     Adding a comment that no one will read of course. But the one thing that is never addressed when it come to optimum protein intake is the degradation of muscle protein synthesis with age. This begins around age 30 as i understand it and from then on muscle protein synthesis efficiency reduces at a rate of 1 to 1.5 percent per year (ask AI or any qualified resistance exercise coach if you do not believe this). The point is that Dr. Fuhrman and all of the plant dominant podcasters do not suggest that the Stuart Phillips et al optimum 1.6 gm/kg body weight needs to be adjusted upwards for every year of age over 30 by 1 to 1.5%. I have followed Dr Fuhrman for years and consume his GBOMBS as an act of faith but the argument around protein is absurd if you want to have any muscle or strength at age 90. Dr Longo was more honest when he said older people must add more protein to their diet and that an IGF-1 of up to 150 was okay. I now try to consume an age adjusted 2.4 gms protein/kg lean body mass or 135 gms protein per day. My fasting IGF-1 is 125. So, lets help the aging community get this one right. No more 0.8 gms protein/kg body weight.

      Yes, this is excellent!!🙌🏼 You might want to listen to Dr. Fuhrman’s most recent podcast with his daughter Jenna where they discuss this very issue … that older folks need more protein. I’m upping my protein as well! Greens, beans, nuts and seeds, whole grains, tofu, hummus and soy milk. According to your theory and calculations I would need 100 gms/day. Interesting!! Thank you!🙏🏻❤️

    The two people I follow and trust the most are, you, Simon Hill and Dr Joel Fuhrman so you can imagine my excitement to see this interview. Thank you so much! As always, Simon, you did a masterful job of interviewing - you have an uncanny ability to channel the listener and ask exactly the question that is forming in my mind. And I love that the long format of your interviews allow you to go much deeper with your guests than most shows.
    The only two things I would have really liked to have seen would have been: #1 more specifics about the way of eating that that Dr Fuhrman promotes (the "Nutritarian" diet). I have found it marvelously prescriptive in terms of what to seek out (greens, beans/legumes/tofu, veggies, mushrooms, berries), what to seek out but also limit in quantity if looking for weight loss (nuts/seeds, ground flax, avocado, whole grains), what to avoid (processed foods, sugar, salt, oil), and how to supplement (mappable to Simon's nutrients of importance). It is straightforward and no-nonsense; I am thriving eating this way and feel like it is entirely sustainable for the long-haul. I see it as exactly the high-quality healthy eating pattern that Simon so frequently discusses with his guests. I think that if the folks commenting here that Fuhrman is a quack saw the specifics of his eating plan they would have to rethink that position. #2 I question the CZcams Video title page "IS YOUR DIET KILLING YOU?" - that seems unnecessarily hyperbolic and incompatible with your thoughtful interview and Dr Fuhrman's methodical approach to health. I fear you are going to turn off potential viewers with that.
    Still this was a *great* interview - thoroughly enjoyed it. It was especially fun to see Dr Fuhrman's respect for you grow as the interview progressed and also to see him relax into the conversation as you disarmed him with your great questions and follow-ups. Anyway, thanks a million for this one! Already watched it twice.

    The other wrinkle with “nutrient density” is the denominator. Dr Fuhrman prefers “per calorie” whereas others look at the weight or volume of the food. Per calorie makes sense if a person is trying to lose weight, whereas per gram/volume makes sense if a person has limited stomach capacity or generally struggles to get in enough nutrients and doesn’t struggle with obesity. I see lots of people shouting over each other on which foods are most nutrient dense and I wish they’d just pause and clarify their definition of nutrient density and sometimes they’d see they’re both right depending on the definition

      Good point. He did mention losing calories from raw vegetables, the body uses more calories to digest raw vegetables than cooked. Processing foods is a good overall, like turning nuts in to nut butters helps break down the cell walls and thus helping maximise the calories taken in.

      @@astonuk9403Also you don’t lose nutrients, enzymes and good bacteria from eating your veggies raw rather than cooked. Fuhrman always recommends cooking mushrooms and dried beans (obviously) though. He recommends eating a big raw salad every day. It’s something I’ve tried to do since following him about 3 years ago. It works wonders, in so many ways. I still eat cooked veg too, in curries, chilli and soups.

      @@Threebridgecastle A balance of both cooked and raw is optimal. I've eaten raw shiitake mushrooms and developed a severe reaction so definitely cook your mushrooms.

      @@astonuk9403 Yeah, I always cook mushrooms, as advised by Fuhrman. There’s a carcinogenic compound in raw mushrooms that’s neutralised by heat. My next goal is to up the amount of fermented foods I eat. Kimchi and sauerkraut primarily.

    Good job, Simon. To me, you seemed a bit restrained on some of the topics but you gave him a platform and he expressed himself well. I wish there had been more links to research to support what Dr. Fuhrman was saying. I stepped away from him (and most other plant-based docs) two-three years ago. Will check him out again.

    Thanks for this interview. Dr. Fuhrman's books and lectures were my first steps years ago to eating a vegan diet. I still occasionally slip up and eat some vegan junk food, but it seems I have his voice in my head telling me to eat those mostly nutritious plant foods.

    Great to see Dr Fuhrman on your podcast. He makes a lot of interesting points, like slight calorie restriction (as opposed to cutting out 25% or similar), and that we can use science to design the best diet ie Blue Zones are great but not necessarily the best possible.

      He makes a lot of unsubstantiated claims which undermine his credibility, like when he went on the Mark Bell podcast and stated that being an NFL linebacker was the most dangerous profession, in part due to all of the animal protein they consume...WTF?

    I think you were right about the Predimed study.
    I can't see any reference to pre-study nut consumption, and the nut and EVOO arms had similar outcomes.

    Thanks, Simon and Dr. Fuhrman, for this interview. Highly informative and valuable nutrition information that can be applied to daily life. I’m not a vegan, but I do eat a primarily whole food plant-based diet with 90 to 95% of protein coming from plant protein foods. And I do agree with Dr. Fuhrman about the importance of incorporating nuts and seeds into the diet instead of oils. Oil is 100% fat, nuts and seeds contain all the macros, including fiber; I think that’s the better option.

      I agree. Except in the winter time in a cold climate without being able to own a car after puberty for around half of us now during our child bearing years. An Obstetrician who studied in more than one nation while becoming well educated once told me that some female adults get pregnant without having the so called norm when it comes to their periods. Perhaps contaminiation in both the ground and in ground water since the days of Cain and Able has something to do with why women in some areas do not ever experience what would seem to them being like a too heavy period to be normal? In the same regions both men and women alike enjoy freedom from so called Dementia well into old age while being able to retain their ability to hear in the higher pitches range. Well enough for male persons to go hunting for wild eggs during their 60's and 70's sometimes too while practising good team spirit. Wild eggs which can only be found after climbing cliffs together on a day out with 'the boys'

    Dr. F had a large influence on me when starting out on my plant based journey. BTW, Omega index of 7.8% last year at 68 yo. WFPB for 10+ years (BMI of 25) but with a small amount of fish once or twice a week (wild sardines or wild salmon), Also routinely eats nuts and olives and EVOL. Was also taking about 200 mg/day DHA/EPA (algae) long term. Increased to about 400 mg/d and will test again soon. Objective to be above 8% (based on work of Bill Harris PhD). On zinc, you can also get a metals panel which will also give you insight into toxic heavy metals. Worth doing.

      We’re following the same diet, I hope I’ll get a good omega 3 index too. I basically used a vegan diet to drop my cholesterol to optimal levels (Total cholesterol: 130, LDL: 80) and now I’ve added mackerel and sardine to get better omega 3s and still eat a ton of flaxseeds everyday (around 40g of flaxseeds)

    I'm on high dose of EPA/DHA supplement for my dry eyes. Here's what I've noticed this past year: seasonal allergy symptoms way down, asthma episodes down, itchy skin way down, hair is shinier, and visual improvement in Meibomiam gland health.

    I have some skepticism as far as eliminating asthma for everyone who suffers with this through a plant-based diet. I don’t know if it’s dependent on the type of asthma you have (mine is exercise-induced), and I’ve been plant-based for 3 1/2 years. I still require an inhaler prior to exercise. I’ve tried without, and I cough and cough for hours.
    I have other previous “ailments” that have most definitely resolved with my plant-based diet. For one, I suffered with anxiety attacks regularly, and they completely halted when I stopped consuming animal products.

    47:36 The only problem i have with comparing nutrient density of green vegetables to any other food is that is pretty hard to eat 100 calories of green vegetables. This is coming from someone who eats 10 ounces of mixed left greens a day. That's a big salad, truly, and it's only about 70 calories of lettuce. We cannot depend on greens to get our caloric needs or we will be in the toilet allday.

    Thanks Simon, an interesting conversation. We're all simply trying to navigate our way through the nutrition maze to suit our individual metabolism. IMHO Dr Fuhrman could listen to your podcasts with Richard Johnson...he may then look at dopamine and hunger a little differently
