Congratulations on your first video. You're quite right - Williams' book is wonderful; I only wish it had been written by the time I first learned probability theory!
For the Shakespeare bit, yes. But like I say, we’re simplifying and it’s huge either way. no monkey is ever randomly doing this. It’s just a bit of motivation using the well-known infinite monkey theorem
