Eggplant needs to b slit then checked for worms,washed well.after frying eggplant and then dipping in bhaji batter needs thick batter to stick on the eggplant but without frying egg plant it can steamed and then dipped in normal bhaji batter,tht is less oily.if egg plant is stuffed with little roasted jeeera kashmiri chilli turmeric mango powder chat masala salt and made into.paste with few drops oil,then steamed later fried lin bhaji batter it will taste gud.
