  • I’ve never been a huge fan of polenta. And that’s because as a kid I used to get it slightly undercooked, which gives it a sandy texture, and bitter aftertaste. That’s not an issue here, since we boil and bake, which makes it sweet, soft, and absolutely delicious, especially layered into a lasagna. Enjoy!

      Don't the sell gluten free lasagna noodles?
      Also the Chinese have thick rice noodles that are sold in (folded) sheets in some Chinese groceries.

      Very few chefs/cooking channels will show mistakes as they don’t want to be seen as anything less than perfect. Chef John is one of very few that not only shows his mistakes (he owns them), but teaches us how to not repeat them. He uses them as learning experiences and/or teachable moments. Also they are funny as hell. Much respect for this man.

    Quick tip: a layer of sauce going down first may prevent sticking just like with regular lasagna. Just as thought, and one I plan on trying when I make this one for the first time...

    So let's talk worst kitchen disasters. Pony up guys. I'll start off. I was doing a cooking demonstration in front of maybe a 1,000 people making guacamole. I was trying to cut up avocados and talk at the same time. Well, I sliced my hand open pretty good. I didn't miss a beat in my commentary and my assistant stepped right in and took over the cooking. I applied pressure and she made the guacamole.

    Sometimes, I think Chef John has psychic abilities. I was just, five minutes ago, looking at the leftover corn meal I have and wondering what I should do with it. Now, I know because I also have some leftover ricotta mixture and some sauce from some lasagne I made previously.
    “I grabbed a fork and started to rage-eat.”
    I thought I was the only one who did that!!

      Cornmeal mush with some feta or other cheese and maybe a fried egg is just such a delicious comfort dinner. Sometimes we add fried potatoes too.

    I like how Chef John covered up the cracks with the layer of tomato sauce, instead of covering up the entire top. It reminds me of a flag.

    A real chef is willing to admit their mistakes. I’m making this with moms gravy that has short ribs and Italian sausage with our favorite polenta that has the pheasant on the label.

    Just made this recipe. Holy s*@t!!! As someone who was raised in an Italian family, and having eaten flour based lasagna forever...this is simply amazing. AND you dont feel like passing our right when youre dont eating! The corn gives such a wonderful flavor that all the ingredients seem to love! Thanks Chef John.

    I love polenta so much, it's a must in romania with many many meals. I usually add it to boiling water, stir a lot and thrn let it cook on medium low heat covered for 10 min and done! I like it runny with some feta sprinkled on it.

    Try putting a layer of provolone slices on the top with oregano and Parmesan for the last 20 mins or so. It makes a nice bubbly top.

    Growing up we would always set the polenta in the fridge in a bread pan and then heat it up in the oven before serving with sunday's marinara sauce and a dollop of ricotta or cottage cheese. Best in the summer with grilled zucchini, summer squash, and tomatoes on the side, but other grilled or roasted vegetables are pretty ok.

    Hey my Dads family was from Cheshvika. He would make polenta all the time. But he would use a fist size potato diced very fine in the water and cook it till done. Then mash is in the pan water for the polenta, then he add the polenta as you did. Our main dish was pork country ribs and sourcrout spices garlic black pepper salt to taste after pork was tender. Then serve over polenta. Any left over polenta was put in a loaf pan and fried in slices in butter and then maple syrup over it. Very good!

    Just a suggestion: to prevent lasagna from sticking to the bottom of the pan, I always put in a layer of sauce first- usually with some water mixed in to make it runny-ish. However, even the ruined version looked absolutely delicious.

    @2:55 Chef John, you must trim that and fry it! Leave them french-fry-shaped and just fry them until crispy. They're called "polenta frita" here in Brazil and it's an amazing gluten free fried snack. Goes grate with pepper jam.

    That somewhat resembles tamale pie. I think I'd put grated cheese on top before baking and not try to unmould it. Looks like it would be best served from the pan, as is.

    Just now assembled this and put it in the fridge. I had all the ingredients except parsley. For the sauce I browned some sausage and mixed it into Prego (if it turns out OK I'll make a proper sauce). I used a much smaller loaf pan and filled it all the way to the top. I expect a messy boiled over disaster but that's what foil-lined baking sheets are for. Can't wait to bake and eat later.
    I thought I liked polenta but I see what Chef John means by a slightly bitter taste.

    one of the most delicious things Ive had is funchi. They take the polenta and make slices like you did, than cut them fry size, and fry them in oil. Add spices and youve got a delicious snack

    I have a baked Polenta, Sausage and Peppers dish I love and save the juices from my pre-fried Sausage to make a Gypsy Sausage Gravy to pour over dish. This recipe however, by far caught my heart!     You could cut into the lasagna like meatloaf out of the pan. Still looks delicious.
