    this is my first time hearing of blue matcha. Buttefly pea flower has been trendy for a while now though, and I'm still not sick of it! I love having random blue things and knowing it's coming from a flower as opposed to something artificial. bring on the purple martinis!

    Also, purple cabbage juice also changes color when acids or bases come in contact with it.

    I love blue matcha but you have videos of spirulina which is an algae in this video. The blue matcha is the blue/indigo powder that comes from the flower (tastes better than the algae IMO and has some better health properties from what I have discovered. When I toured asia I had this stuff everywhere (Even the rice is blue LOL) it is very good and a big part of cultural tradition. There are some good brands that sell in the United States though, I recommend Ancient Choice if you like premium blue matcha butterfly pea and Incas if you you just care about color and less about the total benefits

    I thought pea flowers were purple. Never heard of blue matcha, but it might make a natural coloring for a blue cake.
