I've been going to Vallarta for years. I like all of your 5 choices, but IMO, the best taco stand is Mariscos Rafa(Aquiles SerdĂĄn 309). Chef Rafa is a famous chef that opened a stand. He serves sushi quality tuna in a Dedos de Pescado taco for 18 pesos...wow! I was disappointed with Marisma after they hiked their prices.

The last couple times we went to PV, we went to the taco stands on the street behind Walmart.
It's called THE ARAMARA. they got some good tacos right there.
Iâm gluten-intolerant: Can someone give me a rundown what names refer to corn tortillas, and which wheat?
My current understanding:
Wheat: Chesadillas, Burritos
Corn: Tostados, Tortilla/Nachos, Tacos.
Correct? What am I missing?

I was really surprised that you didn't have any tacos al pastor on your list. Those are my #1 favorite around here in PV. So many great places, all slightly different. I was actually trying to go to Pacho's Takos last night but the rain kept us away!
You guys should go to "Mercado Palmar de Aramaras"! That's where I tried the best horchatas and aguas frescas. I got some "huaraches" there too and they were so delicious.
Make chicken tinga.
While not technically a stand, Pancho's Tacos is the most outstanding taco experience in PV. Located in the heart of the romantic zone, this place is beloved by locals and tourists alike. Watching the owner orchestrate the entire process, in this sidewalk adjacent space no larger than a living room, it is like watching a conducter at a symphony. It is absolutely spellbinding how the marriage of burning wood coals and a spit of al pastor the size of a rain barrel, come together with such harmony. Service is stellar and as seasoned as the menu. Prices are outstanding, if you have 150 pesos you can have the most satisfying taco induced food comas of your entire life, and have leftover chorizo con queso to put in your eggs the next morning. There is always a line up, so be prepared to wait. If that isn't your thing and you want to be served faster, I suggest you keep that to yourself if you are in line with me, because if I hear that I am going to shut you down, I come all the way from frozen Canada each winter to defrost my ass and you know nothing about waiting 45 minutes for a taco. So in summary these tacos are so fulfilling and delicious that I have formed a strong emotional attachment to Pancho's Tacos. Please go and try the food, support local and watch the magic that comes out of her Tacoria.
