I actually slice them and put them in the microwave (covered with a plastic spill cover) for 8-10 minutes depending on how much I have...then eat the eggplant COLD in a sandwich with a spray of olive oil, garlic, and whatever else I want to put on! I always have a supply ready to eat in my fridge! They are sweet as sugar! But this recipe is divine!
