Oh, maybe that's why. I used baby carrots and they just cooked up fine. You could leave them simmer a little longer. Hope things are well in the Netherlands. Stay safe and well.
I love the recipe, but you forgot....OMGoodness!! About the 2 TBSP maybe more of brown sugar that you added before the Dijon Mustard. OR am I just getting old??
