I was purely eyeballing the hook and yarn by scale since I don't believe it was mentioned in the video. Also the content of the yarn might help too (Wool blend, acrylic, cotton, etc.) in case the viewer wants a similar result. I think you can just put that info as a pinned comment and be good. 😊

It looks like a thinner DK weight or a sport weight. I'm only estimating, but might be a 3.5mm hook.
