THE TALE OF THE MAGIC POTSTICKERS.
I worked in a American Chinese restaurant that by ACCIDENT used RED cabbage for their potstickers by an ordering error on a 3 day national holiday weekend. We had to use it, as that was all we had. We cleaned out every supermarket of GREEN cabbage for a 10 mile radius that prior week.
Chef John really mentioned the possible use of RED cabbage today at 1:02 .
We had a weeks supply of potstickers made with RED cabbage in lieu of green cabbage. The problem was the filling was BLUE as the kitchen staff made the filling WITHOUT AN ACID [usually vinegar] TO MAKE THE CABBAGE RED.
No one would eat the BLUE potstickers. Then I got an idea and named this culinary fiasco MAGIC potstickers.
I made a special dipping sauce of black vinegar, soy sauce, garlic, ginger and a bit of sugar. When you dipped the BLUE potstickers in the vinegar based sauce the BLUE potstickers MAGICALLY TURNED RED!
The MAGIC potstickers were a big hit with the kids. The grownups not so much. For months after we finally sold out all the BLUE potstickers, kids would still ask for the MAGIC potstickers. A funny, but true story.
thats interesting name for Gyoza.. also you dont need Cabbage for making it. you can replace it with more onions or go for the pumpkin or radish instead.

Yes, but they were a regular menu item in a Chinese restaurant...called pork potstickers. They were always half cabbage, just not purple cabbage. Thanks,

If you are into Asian dipping sauces, make a larger portion of the equal parts vinegar and soy sauce mix and let the extra age. The mellowed mix has a different flavor than the raw mix and is actually traditional Chinese, according to Grandmother Wong. It can also be flavored with chilies, scallions fried onions and/or garlic when serving.
I have made spaetzle with the special tool and with a potato ricer (this works, too), but a cheese grater never occurred to me. Brilliant! The one way I cannot master is the wooden board and stick that pushes it off into the water. I’ve watched German ladies on CZcams doing this, and it’s so cool.
Made these for a party platter tonight. they turned out GREAT. made the potstickers with a bunch of leftovers I had, added the cabbage and onions and seasonings and they went like wildfire! Time consuming, but worth the trouble. Thank Chef ! Jon

Austrian here, that is a culturally correct assessment.
They're generally speaking considered easy pasta here, being related to the Schupf (toss-and-catch) noodle whose core principle is only mildly different.

Much as I love potstickers, I've never been tempted to make them...but you got me. And thanks for the ingredients in the dipping sauce; there is never enough included and nothing I've tried ever seemed to be correct!

Very nice looking Dumplings and buns 👍Great job! I am a Chinese also a hobbyist making Dumplings meat buns and all different kinds of foods . I have never tried the second lazy one and looks so easy definitely will give it a try next time. I normally add some kikkoman sweet cooking rice seasoning to the meat fillings for more juice and taste great. Thanks for sharing your works.

I love potstickers but my fav is boiled dumplings in soup. I have German ancestry and I grew up with my mom making delicious dumplings :)

This reminds me of my attempts to make ravioli. Usually, somewhere around the third raviolo with the filling squirting out of my dough, and the dough sticking to itself, me, the counter, rolling pin plus some on the dog, I give up.

I just love this guy
Use starch water instead of water for potsticker and flip it upside down when you place them on plate. You will get snow flake like effect and crunchier bottoms.

I made this and it was really good! A variation I'd like to try is topping with some shredded Fontina cheese with the parm (but not too much) and shredded sage leaves. Cook til brown and bubbling-yum!

Of course there isn't a best way to make dumplings. But here's my way to make them as a Hong Konger. Hope it help.
For the meat: First, add some sugar just 1-2 teaspoon is fine. It will balance all the saltiness. Add a few tablespoon of water to the meat. Stir the meat until all the things combined and water is absorbed. The meat will like a "sticky dough".
For the vegetable: If you use cabbage, add some salt to let the water come out. Make sure you drain and dry them before adding to the meat. Because it may make your filling watery.
perfect. the task of stirring the meat in one direction with a wooden spoon has fallen to me. Getting the meat fibers going in one direction seems important

I like to add finely chopped water chestnuts so you get a little crunch inside
Spatzle (I always said "sh-PAYT-zuh-lee") are also great when you make them with pancake batter and serve/eat them with stewed apples, some homemade cranberry sauce, and clotted cream. Just saying.

I’ve had Spatzle in a restaurant tossed in the butter with green beans. Also had them dropped into soup broth, which is excellent! Chicken soup, beef broth ….

I once had some dumplings (bao) in Shanghai that blew my mind. I’ve never been able to find any in LA, SF, or NY like those I tasted in China. Maybe I need to try to make my own!!

i absolutely will use that lazy dumpling technique. not as young as i used to be and finicky counter work can result in backaches these days.
I always loved the way my Aunt made Spatzle. She made it peppery somehow and unfortunately the recipe passed away when she did. Tried to duplicate it but it never comes out right. It was always a side dish to beef in our house and sometimes served with cheese on top. My Mom topped it with corn chips in her later years so it had a crunch.
I made your lazy dumplings one time. I remember it was great. And you reminded me that I'm way overdue to make that again...

Che John, the best Chinese dumpling stuffing is the mixture of Chinese chive, minced sweet shrimp and fresh ground pork on the fat side. You have to buy the ground pork from a Chinese grocery store. The American super market version is like mashed which doesn’t taste as fresh as the lighted ground version sold in the Chinese grocery stores.
