    According to my calculations, there are places like this (or similar) in just about every town in the plains and southern states, especially Texas. A lot of them are just BBQ joints, while some are running the same lane as this place. Lots of brown butcher paper to wrap up things. As Joe (from his and Nic's Road Trip channel) points out a while ago, people in this area prefer to eat cooked food whenever possible. He noted how many of these places, as well as the family oriented, cafeteria type places like Ponderosa, etc. People in these areas are often out in isolated areas for their homes and work, so they tend to take whatever opportunities to eat with other people they have. You see the same thing in places in the Appalachia spaces.
    areas like West Virginia, eastern Ohio, western PA and so on.

      Thank you for your reply. I agree, these small towns have some incredible eating joints that only the local people know about. Their reputation comes from the area clientele who continually support these family businesses. As a retired travelling salesman, I saw a lot of these cafes and was amazed at the stories they had to tell. Most of the time their food was excellent.
