Everyones use case might different so it just depends what you value the most. Instinct2x advantages are : cheaper, better battery, more robust, I find the screen brighter/easier to read in dim mode. Fenix7 advantages: color screen can view more data, touch screen, looks nicer, extra health features like endurance and stamina for cycling is where i use it, maps, it is just more of smart watch.
