It's natural to want to impress your family with a grandiose meal, but if you've ever seen A Charlie Brown Thanksgiving, you should know it's not the food that makes the holiday but the company. Sometimes, being a lazy ass and running out to get prepared turkey that's inferior to one you could've made at home for a holiday can often be just as memorable if not more so than a plain old Thanksgiving. One of my fondest Thanksgiving memories was when my family couldn't get their hands on a turkey because they had sold out at our local supermarket, so we instead did a massive food run around all the Boston Market's in our town and prepared a great (albeit kinda average tasting) feast. Stop being worried about what's wrong with the picture and think about what it could be instead. Less-than-ideal circumstances always make the best stories. Besides, I doubt the Popeye's turkey was any more roided up than your average Butterball turkey.

When you sous vide meat, you have to let it rest afterwards directly in an ice bath. This will allow the meat to absorb the juices that was expelled during the cooking process as we know that heat forces an object to expand and expell, while cold forces it to contract. Contraction in a vacuum environment like a sous vide sealed bag can only expand by the volume of the density of its environment within the bag. Forcing the liquid back in and thus makes it juicy and tender.
