  • David Chang's new Netflix docu-series, Ugly Delicious, just launched February 23. Here, the Momofuku mastermind breaks down the guiding principles behind his "ugly delicious" philosophy-an ideology that pushes diners to see the hidden beauty in everyday food. At his new L.A. outpost, Majordōmo, Chang whips up Asia's ubiquitous bing bread, a pancake-like dish that changes meaning depending on the region and culture.     ugly Delicious is by far one of my favorite shows ever. Such an excellent job of showcasing food as well as the stories behind food. There such a rich history behind every dish we eat, and the show does such a good job of explaining that. Its a great mix between culinary and history

      One-Eye he’s not trying to. He’s trying to show that we’re more similar than we are different, through food. He grew up in New York wheee there’s different cultures every block. He’s got a sweet story to tell and a good outlook on food culture. That’s why Bourdain said he pretty much gives 0 fucks about what anyone on TV has to say about food, unless it’s Eddie Huang

      Dave England neither has Zimmern or Bourdain. Or MOST commentators of food and food culture. Mind of a Chef was the first time we really had a collection of Michelin Star chefs talking about food in a real, digestible way. You don’t have to have an award from a tire company to be a good writer and have a passion and understanding of food. He’s likable and relatable and not a snob. What else is out there? Guy Fieri? Every douche bag Food Network has recycled for the last 15 years?

    Episode 1 about pizza was pretty solid. His experience delivering pizzas came off 100% like it wasn't his idea, he was not ok with it, and the icing on that cake was when the delivery driver said he went to 4 cities in Italy and he could've made a better pizza than any of them. Chang was done. HAHA, the real David came out.

    I love these videos for 3 reasons, they are shot great. Even if the content doesn't interest you, you can just visually enjoy the experience. Second, I love how the people are always talking about the food with love and passion, seeing them cook and talk about their past with culture is great and just warms my heart. And finally I just enjoy learning about all different kind of foods and simple ways to cook them. Every episode is interesting and always gets me hungry and wanting to try new things. Thanks FWF, and everyone working on this, you are doing great work :)

    Growing up as Jordanian I eat Arabic bread ( pite bread ) and hummus everyday. Not sure how I feel watching this guy making these foods and giving them different names.

    The unity of Asia is often understated. It is commonly assumed Indian, Japanese, Korean, Chinese, and all the other sub-cuisines are their separate territories, with no overlap. But this couldn't be further from the truth. The breads of Asia really exemplify the close similarities among the cuisines of the Asian continent. Indian Naan, Korean Baang, and Chinese Bing seems different at first, but they are almost identical.

    I really enjoyed the show as a whole, both light hearted but tackling some tough subjects at the same time. As someone else mentioned though at times I find chang’s Attitude a little insufferable, he spends a lot of time complaining the “white people” don’t appreciate Asian cuisine. This might be true in America but rest assured in places like Melbourne, Australia multiple Asian cuisines are celebrated. The United Kingdom as a whole can’t get enough of Indian food, and despite in some cases being watered down versions of traditional dishes on the whole it’s very true to source. You can’t use America as evidence to tarnish all other countries as being ignorant to what true Asian food is like. On the whole though it was great.

      Non us here, i think the white american (the majority) has gone too soft, especially for white straight male.
      Somehow they got all the blame for every problem, to the point "white men/women" have negative connotation attached to it.

      he wasnt making hummus; he used fermented chickpeas. different ingredient and flavor profile from fresh garbanzos since the protein structure of the legume is broken down prior to making the dish

    I'm starting to find David Chang's personality to be a bit insufferable. That being said, there's no denying he's still one of the best chefs in America. It's like when you start getting annoyed by the antics of a great musician, but can't deny that they are amazingly talented at what they do.

      He constantly compares everything he eats to some Asian dish. Never seems to enjoy any cooking but his own. He also seems to have very little respect for authenticity and history, which is fine, I suppose, because his style of cooking is to break down all the barriers of the past and make new things out of old, but it doesn't hurt to show a little respect to the people who came before and created the dishes he deconstructs.

      In Ugly Delicious he connects everything to Asian food because he want to show that the language of food is universal. He want to break down barriers and show that everyone around the world have similar stuff so there shouldn't be a elitist attitude in food saying for example "only southern fried chicken is real fried chicken" or "this isn't BBQ cause it's not made from a pig" so on so forth. He connects this by using Asian food because that is what he is familiar with.
