I like that you take the time to grate a block of cheese for this recipe instead of shortcutting it with shredded cheese. Companies who produce shredded cheese use powdered cellulose (wood pulp) and anti-fungals to prevent clumping and spoilage.
+Kim Donovan Thanks, I always grate my own cheese. It's worth the effort! It's also extra important for this recipe because the wood pulp is there to help the cheese not clump together, but if you use pre-shredded cheese, the sauce won't be smooth.

hey fifteen spatulas! I tried this recipe with regular cheese, But then it came out sticky and cheese bits are not yet melted. I added milk and cooked it until it the cheese melted and it came out well! Thanks for the recipe
Thanks! Store in an airtight container. Then, only reheat the sauce on the stovetop in a pan. Microwaving doesn't go well. Also, you may need to add 2 tbsp or so of water to the cheese and whisk, just to restore the smooth texture. I will type this up in the recipe instructions =)
i think u guys have different cheddar in america than here in australia, ours isn't that orange- its light yellow and crumbly, not the processed perfectly smooth stuff u guys get, and dosent melt so easily. my sauce comes out like a weird fondue - really oily and claggy . I thank american cheddar is another thing altogether. I know some people say american cheese isn't real cheese- but i like both to be honest- dang really craving that american cheese flavor- i know its bad - but thats why its sooooooo good!!

+The bangarang Depends... Some of the "pre-shredded" cheeses are processed to some degree to prevent the cheese from "sticking" back together again. This is most likely your problem. Simply shred or cube up a proper cheese.

turned out well for me! i used half cheddar and half pepper jack. i think i had a little too much rue, but that didn't affect it too much. i added in some sauteed onion, bells, and chile. served it in an iron skillet with tomato and cilantro on top. could have used a couple more shakes of cayenne i think.

if you out shredded cheese on nachos and set it in the microwave for a minute then you get cheesy nachos.
You can get some nachos, put them on a plate, sprinkle cheese on top, microwave for 20-30 seconds, and voilá :D
I added half of a small can of diced chilies to this and it was amazing. Added the perfect nacho cheese kick. Thank you for this.

Yes, you might need to add more milk or even water to thin out that consistency. It tends to get thick as it sits and cools
